Description

This recipe transforms leftover prime rib into delicious French-style beef dip sandwiches. Thinly sliced prime rib is warmed in savory au jus, then nestled inside garlic butter toasted French rolls and topped with melted Swiss cheese for a comforting and flavorful meal perfect for a quick lunch or dinner.

Ingredients

Meat and Cheese

  • 12 slices prime rib (slices should be as thin as possible)
  • 8 slices Swiss Cheese

Bread

  • 4 French rolls

Au Jus and Butter

  • 1 package au jus mix
  • 1/4 cup butter
  • 1/2 teaspoon garlic powder

Instructions

  1. Prepare Au Jus: Follow the instructions on the au jus mix package to prepare the au jus. Keep it warm over low heat on the stove while you prepare the other ingredients. Preheat your oven to the broil setting.
  2. Slice Buns: Slice each French roll horizontally, but do not cut all the way through; leave one side attached so the roll can hold the meat and cheese securely.
  3. Make Garlic Butter: Mix the butter with the garlic powder until well combined. Spread the garlic butter generously on the cut sides of each roll and place them butter side up on a cookie sheet.
  4. Broil Buns: Place the buns under the broiler until the butter is browned and edges are crispy, about 2-4 minutes. Remove the buns from the oven.
  5. Warm Beef: Submerge the prime rib slices in the hot au jus to warm the meat, letting it heat for approximately 2 minutes to absorb flavor and become tender.
  6. Assemble Meat on Rolls: Using tongs, remove the beef slices from the au jus, letting excess liquid drip back into the pot. Evenly divide the warm meat among the four rolls.
  7. Add Cheese and Broil: Top each assembled sandwich with two slices of Swiss cheese. Return the sandwiches to the oven and broil until the cheese melts and bubbles, about 1-3 minutes.
  8. Serve with Au Jus: Divide the remaining au jus evenly into four small bowls for dipping, and serve alongside the beef dip sandwiches.

Notes

  • Use very thinly sliced prime rib for the best texture and ease of eating.
  • Keep a close eye on the buns and sandwiches while broiling to prevent burning.
  • Au jus can be made from scratch for a richer flavor if desired.
  • If French rolls are not available, crusty sandwich rolls or hoagie buns can be substituted.
  • For an extra garlic kick, add minced fresh garlic to the garlic butter mixture.
  • Leftover au jus can be refrigerated and used within 3 days.
