Description
These Leftover Mashed Potato Cakes are a delicious and easy way to transform cold mashed potatoes into crispy, golden patties perfect for a quick snack or side dish. Combining creamy mashed potatoes with sharp cheddar cheese and lightly fried to perfection, they’re topped with tangy sour cream and fresh green onions for added flavor.
Ingredients
Potato Cake Mixture
- 2 ½ cups cold mashed potatoes
- 1 ½ cups grated cheddar cheese
- 2 large eggs
- ½ cup flour (plus more for breading)
For Frying and Serving
- Neutral flavored oil (such as vegetable or canola oil; amount as needed for frying)
- Sour cream (for topping)
- Sliced green onions (for topping)
Instructions
- Mix dough: In a large bowl, combine the cold mashed potatoes, grated cheddar cheese, and eggs. Gradually stir in the flour, adding a little more if necessary, until the mixture forms a soft and slightly sticky dough.
- Form cakes: Divide the dough into eight equal portions. Roll each portion into a ball, then gently press down to form patties about ¾ inch thick. Pour some flour into a separate bowl and coat each cake with flour to prevent stickiness.
- Fry: Heat a generous splash of neutral flavored oil in a medium-sized cast iron or non-stick frying pan over medium heat. When hot, add half of the potato cakes, cooking for 3-4 minutes on each side or until golden brown and crispy. Carefully flip to cook the other side. Remove and place on paper towels to drain excess oil. Repeat with remaining cakes.
- Serve: Plate the crispy mashed potato cakes and top with dollops of sour cream and sliced green onions. Serve immediately while warm.
Notes
- Use a neutral oil with a high smoke point for frying, such as vegetable, canola, or grapeseed oil.
- The dough should be soft but manageable; if too sticky, add a bit more flour gradually.
- Make sure the pan and oil are adequately heated before adding the cakes to achieve a crispy crust.
- These cakes are best eaten fresh but can be reheated in a skillet or air fryer for crispiness.
- For a vegetarian option, ensure vegetarian-friendly cheese and eggs are used.
