Description

This refreshing Keto Italian Soda recipe combines a homemade sugar-free raspberry syrup with club soda and a splash of heavy cream for a fizzy, creamy, and low-carb treat. Perfect for a quick, easy beverage that satisfies soda cravings without the sugar spike.

Ingredients

Sugar-Free Berry Syrup

  • 1 1/2 cups fresh raspberries
  • 1 cup water
  • 1/2 cup sweetener (allulose recommended)

Italian Soda

  • Club soda, as needed
  • 1/4 cup heavy cream
  • Ice, as needed
  • Lightly sweetened whipped cream (optional, for topping)

Instructions

  1. Make the Sugar-Free Berry Syrup: In a medium saucepan over medium heat, combine the fresh raspberries, water, and allulose sweetener. Bring the mixture to a simmer and cook for about 5 minutes, or until the berries are soft enough to be easily mashed.
  2. Strain the Syrup: Remove the saucepan from heat and pour the mixture through a fine mesh sieve to remove seeds. Press the berry solids gently with a spoon or spatula to extract as much juice as possible, collecting all the syrup in a bowl.
  3. Prepare the Italian Soda: Fill a highball glass with ice cubes. Pour club soda into the glass, filling it to about 2 inches from the top.
  4. Add Raspberry Syrup and Cream: Pour 1/4 cup of the prepared raspberry syrup into the glass. Then, stir in one tablespoon of heavy cream until well combined.
  5. Optional Topping: If desired, top the Italian soda with lightly sweetened whipped cream for an extra creamy, dessert-style drink.

Notes

  • Allulose is recommended as a sweetener for its keto-friendly, low-calorie properties; however, other keto-approved sweeteners like erythritol or stevia blends can be used.
  • Use fresh raspberries for the best flavor, but frozen raspberries can be substituted if fresh are unavailable.
  • The sugar-free berry syrup can be stored in the refrigerator for up to one week.
  • Adjust the amount of heavy cream to suit your taste preference for creaminess.
  • For a dairy-free version, substitute heavy cream with coconut cream.
  • Serve immediately after preparation to enjoy the freshest carbonation.
