Ingredients
Chicken
- 3 lbs boneless skinless chicken breasts (fresh or frozen)
Liquid & Seasonings
- 1 cup liquid (water, chicken broth, apple juice, or pineapple juice)
- 1 teaspoon salt
- 1/2 teaspoon pepper
Instructions
- Prepare the Instant Pot. Place the inner pot inside the Instant Pot and set the trivet at the bottom to keep the chicken elevated above the liquid.
- Add liquid. Pour 1 cup of your chosen liquid—water, chicken broth, pineapple juice, or apple juice—into the inner pot to provide steam and flavor during cooking.
- Arrange and season chicken. Lay the chicken breasts in a single layer on the trivet and season evenly with salt, pepper, or any preferred seasonings for enhanced taste.
- Seal the Instant Pot. Close the lid securely and set the steam release valve to the "Sealed" position to ensure proper pressure cooking.
- Pressure cook the chicken. Cook on high pressure for 8-10 minutes for fresh chicken breasts or 10-12 minutes if using frozen chicken breasts, adjusting time slightly based on thickness. The amount of chicken does not affect cook time but may change the time needed to reach pressure.
- Release pressure. When cooking is complete, allow the pressure to release naturally for 5 minutes, then carefully switch the valve to "Venting" to release any remaining steam.
- Check doneness. Use a meat thermometer to ensure the internal temperature reaches at least 165°F (74°C). If undercooked, reseal the pot and cook for an additional 1-3 minutes at high pressure, or let the chicken rest with the lid on for 5 minutes to finish cooking.
- Rest the chicken. Let the chicken rest outside the pot for 5 minutes before slicing or shredding to retain juices.
- Shred the chicken (optional). To shred, remove the trivet and keep about 1/2 cup of the cooking liquid in the pot. Return the chicken to the pot and shred using a handheld mixer for quick and easy shredded chicken perfect for recipes requiring pulled chicken.
Notes
- Cooking time depends on chicken thickness; thicker breasts may require closer to the maximum suggested time.
- Frozen chicken breasts take slightly longer to cook than fresh but do not alter the cooking time based on quantity.
- Using flavorful liquids like chicken broth or juice adds subtle flavor variations to the chicken.
- Natural pressure release helps keep the chicken moist and tender.
- Always verify that chicken is cooked to a safe internal temperature of 165°F (74°C) before serving.
- Shredded chicken leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days or frozen for longer storage.
