Ingredients
Sweet Potatoes
- 2 medium sweet potatoes, peeled and cubed
- 2 Tablespoons olive oil
- 1/4 teaspoon cinnamon
- 1/4 teaspoon black pepper
- 1/2 teaspoon salt
Ground Beef Mixture
- 1 pound lean ground beef
- 1/2 cup onion, diced
- 2 Tablespoons taco seasoning (more to taste)
- 1/2 teaspoon salt (divided)
Toppings
- 1 cup cottage cheese
- 1 avocado, sliced or diced
- Hot honey, to taste (for drizzling)
Instructions
- Preheat Oven: Set your oven to 415°F (210°C) to prepare for roasting the sweet potatoes. This high heat ensures they get crispy on the outside while remaining tender inside.
- Prepare Sweet Potatoes: In a mixing bowl, toss the peeled and cubed sweet potatoes with olive oil, cinnamon, black pepper, and 1/2 teaspoon salt until evenly coated.
- Roast Sweet Potatoes: Spread the sweet potatoes in a single layer on a baking sheet. Place in the preheated oven and cook for 20–25 minutes, stirring halfway through to ensure even roasting and crispiness.
- Cook Ground Beef Mixture: While the sweet potatoes roast, heat a large skillet over medium heat. Add the ground beef and diced onion, cooking until the beef is browned and the onion is softened. Stir occasionally and break up large pieces with a wooden spoon. Drain any excess grease.
- Season Beef: Add taco seasoning and 1/2 teaspoon salt to the browned beef. Stir well to combine and cook for another minute so the flavors meld. Season to taste with more taco seasoning or salt if desired.
- Assemble Bowls: Divide the roasted sweet potatoes and seasoned ground beef evenly among four serving bowls. Top each bowl with a generous scoop of cottage cheese, fresh avocado slices or chunks, and drizzle with hot honey to add a spicy-sweet finishing touch.
Notes
- For a quicker option, sweet potatoes can be cooked in an air fryer at 400°F for about 15 minutes, shaking halfway through.
- Use lean ground beef to reduce excess grease and make the dish lighter.
- If hot honey is unavailable, a mixture of honey and chili flakes or hot sauce can be used as a substitute.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
