Description

Juicy and flavorful Honey Sriracha Grilled Chicken Thighs with a sweet and spicy glaze made from fresh ginger, garlic, honey, and sriracha. Perfectly grilled to a tender finish and enhanced with a smoky and tangy kick, this recipe is ideal for a delicious outdoor meal or barbecue.

Ingredients

Chicken

  • 2.5 lbs. Just BARE Chicken Thighs

Glaze

  • 3 Tablespoons unsalted butter
  • 1 Tablespoon minced fresh ginger
  • 2 garlic cloves, minced
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon ground cloves
  • 4 Tablespoons honey
  • 6 Tablespoons sriracha
  • 1 Tablespoon lime juice
  • Salt and pepper, to taste

Other

  • Cooking spray or olive oil for grilling

Instructions

  1. Preheat the grill: Heat grill to medium-high heat, about 400ºF, to prepare for cooking the chicken thighs evenly.
  2. Prepare the glaze: In a small saucepan, melt the butter. Once melted, add minced fresh ginger and garlic. Stir until fragrant, about 1 minute, releasing their aromatic flavors.
  3. Add spices and sweeteners: Stir in smoked paprika, ground cloves, honey, sriracha, and lime juice. Combine well and let the mixture simmer for 4-5 minutes, allowing the glaze to thicken and develop flavor.
  4. Season the chicken: Pat chicken thighs dry with paper towels. Season both sides generously with salt and pepper.
  5. Prepare the grill grates: Spray the grill grates with cooking spray or rub them with a rag soaked in olive oil to prevent sticking.
  6. Grill the chicken: Place chicken thighs on the grill skin side down first. Grill for 4-5 minutes until nicely seared. Flip and grill the other side for an additional 4-5 minutes.
  7. Continue cooking: Keep cooking the chicken, flipping every 3-4 minutes to avoid burning, until the internal temperature reaches 165ºF, approximately 25-30 minutes total.
  8. Apply the glaze: During the last 5 minutes of grilling, brush the prepared honey sriracha glaze onto both sides of the chicken to add shine and flavor.
  9. Remove and rest: Remove the glazed chicken from the grill and let it rest briefly to retain juices.
  10. Serve: Serve the honey sriracha grilled chicken thighs hot, accompanied by your favorite sides.

Notes

  • To ensure even cooking and avoid flare-ups, keep a close eye on the grill and flip frequently as instructed.
  • You can adjust the heat of the glaze by adding more or less sriracha depending on your spice preference.
  • Using bone-in, skin-on chicken thighs helps keep the meat juicy and flavorful.
  • Letting the chicken rest before serving allows the juices to redistribute for a tender bite.
  • Gluten-free and dairy-free if you use a suitable butter substitute.
