Description

This hearty Hamburger Soup is a comforting and flavorful dish perfect for a quick weeknight meal. Made with lean ground beef, diced onions, garlic, beef broth, and condensed tomato soup, it’s loaded with veggies and small pasta that add texture and substance. Garnished with fresh parsley and Parmesan cheese, this soup is easy to prepare in just about 35 minutes, making it ideal for busy cooks who want a warm, satisfying dish the whole family will love.

Ingredients

Main Ingredients

  • 1 tablespoon Olive oil
  • 1 cup Diced onion
  • 1 tablespoon Minced garlic
  • 1 pound Lean ground beef
  • 10 ounces Condensed tomato soup (plus 1 can-ful of water)
  • 14 ounces Beef broth (about 2 cups)
  • 1 cup Frozen corn or other canned/frozen vegetables
  • 1 cup Small pasta, cooked according to package directions (or uncooked if cooking in soup)

Optional Garnish

  • Fresh minced parsley
  • Freshly grated Parmesan cheese

Instructions

  1. Sauté Aromatics and Brown Beef: Heat the olive oil in a 5-quart pot or Dutch oven over medium heat. Add diced onions and sauté until they become translucent and start to soften. Add minced garlic and crumble in the ground beef. Cook, stirring frequently, until the beef is thoroughly browned and no longer pink. Drain excess grease using paper towels or by tilting the pot carefully.
  2. Season the Meat: Season the cooked ground beef and onions with salt and freshly ground black pepper to taste, ensuring the base of your soup is well-flavored.
  3. Add Liquids and Vegetables: Stir in the beef broth, condensed tomato soup, and the water from the empty soup can to the pot. Bring the mixture to a boil over medium-high heat, then reduce the heat to a simmer (medium-low to low). Add the frozen corn or other canned/frozen vegetables, and simmer until the vegetables are heated through, approximately 6 to 8 minutes.
  4. Cook the Pasta Separately: Meanwhile, cook the small pasta in boiling water according to the package directions until al dente. Drain well. (Alternatively, if you prefer to cook the pasta directly in the soup, add it during the vegetable simmering stage and cook until tender; be aware this may make the noodles absorb more liquid and become softer.)
  5. Assemble and Serve: Divide the cooked pasta evenly into serving bowls. Ladle the hot hamburger soup over the pasta. Garnish with fresh minced parsley and freshly grated Parmesan cheese if desired, to add brightness and extra flavor.

Notes

  • Using lean ground beef reduces excess grease and makes the soup healthier.
  • Cooking pasta separately prevents it from absorbing too much soup and becoming mushy.
  • You can swap frozen corn with other vegetables such as peas, green beans, or carrots based on your preference.
  • If you cook the pasta in the soup, monitor it closely to avoid overcooking and thickening the soup too much.
  • Leftovers keep well refrigerated for up to 3 days and reheat nicely on the stove or microwave.
