Description

Healthy Chicken Fajita Bowls are a quick and flavorful meal featuring tender chicken breast cooked with sautéed peppers and onions, served over rice with black beans and corn. This nutritious dish is enhanced by classic fajita seasoning and can be customized with your favorite toppings like sour cream, cheese, avocado, and salsa for a delicious and balanced bowl perfect for a weeknight dinner.

Ingredients

Protein and Vegetables

  • 1 pound Chicken breast tenderloins
  • 1 Poblano pepper, sliced thin
  • 1 Red pepper, sliced thin
  • 1 Small onion, sliced thin

Grains and Legumes

  • 2 cups Cooked rice (white, brown, Mexican, or cilantro rice)
  • 15 ounces Canned black beans, drained and rinsed
  • 15 ounces Canned corn, drained

Seasoning and Oil

  • 1 tablespoon Fajita seasoning
  • 1 tablespoon Olive oil

Optional Toppings

  • Shredded cheese
  • Sour cream
  • Avocado
  • Salsa
  • Limes

Instructions

  1. Preheat and Season: Preheat a large skillet over medium-high heat and add the olive oil. Season the chicken breast tenderloins, sliced onions, and peppers with half of the fajita seasoning, ensuring an even coating.
  2. Cook Chicken and Vegetables: Once the skillet is hot, add the seasoned chicken, peppers, and onions. Cook for about 3-4 minutes on each side, or until the chicken is fully cooked and the vegetables are slightly tender and caramelized. Remove from skillet and transfer to a plate, covering with foil to keep warm.
  3. Warm Beans and Corn: Using the same skillet, add the drained corn and black beans along with the remaining fajita seasoning. Stir frequently and cook until warmed through, about 3-5 minutes.
  4. Assemble Bowls: Divide the cooked rice evenly among four bowls. Top with the cooked chicken, peppers, onions, corn, and black beans.
  5. Add Toppings: Garnish with optional toppings such as shredded cheese, sour cream, sliced avocado, salsa, and a squeeze of fresh lime to your preference for extra flavor and creaminess.

Notes

  • You can substitute chicken breast tenderloins with chicken thighs for extra juiciness.
  • Brown rice or cilantro lime rice adds a more robust flavor and additional fiber compared to white rice.
  • Adjust fajita seasoning quantity based on your spice preference.
  • For a vegetarian version, substitute chicken with sautéed mushrooms or extra beans.
  • Leftovers keep well refrigerated up to 3 days and can be reheated on the stovetop or microwave.
