Description

A healthier twist on classic Hamburger Helper made in one pot, featuring lean ground beef, grated zucchini, and a creamy tomato-cheddar sauce. This easy, comforting meal comes together quickly and is perfect for busy weeknights.

Ingredients

Main Ingredients

  • 2 tablespoons extra virgin olive oil
  • 1 pound lean ground beef
  • 1 medium yellow onion, chopped
  • Kosher salt and black pepper, to taste
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder

For the Pasta and Sauce

  • 1 pound short cut pasta
  • 1 zucchini, grated (about 1 cup)
  • 2 cups low sodium beef broth
  • 1 1/2 cups milk (use your preferred type)
  • 1 1/2 to 2 cups shredded cheddar cheese
  • 1 tablespoon ketchup

For Serving

  • Fresh parsley, chopped

Instructions

  1. Cook the beef and onion: Heat olive oil in a large pot over medium-high heat. Add the chopped onion and lean ground beef. Season with kosher salt and black pepper. Cook, stirring and breaking up the meat, until the beef is browned all over, about 10 minutes.
  2. Add spices and vegetables: Stir in chili powder, paprika, and garlic powder. Cook for another minute to release the flavors. Add the grated zucchini and pasta, tossing to coat everything evenly.
  3. Add liquids and simmer: Pour in the low sodium beef broth and milk. Stir in the ketchup and adjust salt to taste. Bring the mixture to a gentle boil over medium-high heat, then reduce to a simmer. Cook, stirring frequently, until the pasta is al dente, about 5 to 8 minutes.
  4. Finish with cheese: Stir in shredded cheddar cheese and continue to cook for a few more minutes until the sauce is creamy and smooth.
  5. Serve: Divide the dish among bowls and garnish with fresh chopped parsley. Serve immediately and enjoy your healthier homemade Hamburger Helper!

Notes

  • Use lean ground beef (90% lean or higher) for a healthier option.
  • Grated zucchini adds nutrients and moisture while sneaking in extra vegetables.
  • Adjust the amount of cheese based on your preference for creaminess.
  • Use low sodium beef broth to control salt content.
  • If you prefer, swap regular pasta for whole wheat or gluten-free pasta.
  • For a dairy-free version, use plant-based milk and cheese alternatives.
