Ingredients
Eggs and Filling
- 12 hard boiled eggs, peeled and halved (yolks and whites separated)
- 1/2 cup mayonnaise
- 2 teaspoons Dijon mustard
- 1/2 teaspoon kosher salt
Coloring and Garnishes
- Purple food coloring
- Orange food coloring
- Green food coloring
- Curly parsley (for pumpkin stems)
- Black sesame seeds (for spooky green eggs)
- Pimento-stuffed green olives (sliced for eyeballs)
- Pitted whole black olives (for spiders)
Instructions
- Prepare yolk mixture: Place the egg yolks in a small bowl and use a fork to crush until no large chunks remain. Add mayonnaise, Dijon mustard, and kosher salt. Stir well with a fork until the mixture is smooth and combined.
- Divide yolk mixture and egg whites: Decide how many Halloween varieties you want to make. For all four varieties, divide the yolk mixture evenly into four small bowls and set aside six egg white halves for each variety.
- Eyeball Deviled Eggs - Color yolk: Add purple food coloring to one bowl of yolk mixture, a few drops at a time, until you achieve the desired purple shade.
- Eyeball Deviled Eggs - Fill and garnish: Spoon the purple yolk mixture into the egg white halves. Slice pimento-stuffed green olives crosswise into circular pieces resembling eyeballs and place one slice on top of each filled egg.
- Pumpkin Deviled Eggs - Color yolk: Stir orange food coloring into the yolk mixture in another bowl until the desired orange color is reached.
- Pumpkin Deviled Eggs - Fill and decorate: Fill the egg whites with the orange yolk mixture. Use a toothpick to gently draw curved lines on the surface to mimic pumpkin creases. Garnish each with a small piece of curly parsley to represent a pumpkin stem.
- Spooky Green Deviled Eggs - Color yolk: Add green food coloring to the yolk mixture in the third bowl to your preferred green tone.
- Spooky Green Deviled Eggs - Fill and top: Fill egg whites with the green yolk mixture and sprinkle black sesame seeds on top for a spooky effect.
- Spider Deviled Eggs - Prepare yolk: Use the remaining plain yolk mixture (no food coloring added) to fill the last set of egg whites.
- Spider Deviled Eggs - Create spider decorations: Using a sharp knife, cut black olives to form spider bodies by halving them crosswise or lengthwise. Thinly slice additional olive halves to create spider legs. Arrange the olives on top of each filled egg to resemble spiders.
