Description

These Grilled Watermelon Skewers with Shrimp are a refreshing and savory summer treat, combining juicy watermelon, tender marinated shrimp, and zucchini, all grilled to perfection and topped with tangy feta, balsamic glaze, and fresh basil. Perfect as a light appetizer or healthy main dish, this recipe balances sweet, salty, and smoky flavors for a delightful grilling experience.

Ingredients

Shrimp Marinade and Skewers

  • 1 pound medium-large raw shrimp, peeled, tail optional
  • 1/2 cup Italian dressing
  • 2 tablespoons fresh lime juice
  • 1 teaspoon coarse kosher salt
  • 2 large zucchini, cut into 1-inch thick slices
  • 2 cups cubed watermelon
  • Wooden or metal skewers (soaked if wooden)

Toppings and Garnish

  • 1/4 cup homemade balsamic glaze
  • 1/2 cup feta cheese, crumbled
  • Extra virgin olive oil, for drizzling
  • 2-3 tablespoons fresh basil leaves, optional
  • Flaky sea salt and freshly ground black pepper, to taste
  • Lime wedges, for spritzing

Instructions

  1. Marinate Shrimp: In a large airtight plastic bag, combine the peeled shrimp, Italian dressing, fresh lime juice, and coarse kosher salt. Seal the bag and chill in the refrigerator for 30 minutes, allowing the flavors to infuse while being careful not to exceed this time to avoid rubbery shrimp. Meanwhile, soak wooden skewers if using.
  2. Prepare Skewers: Remove shrimp from marinade, discarding leftover marinade. Thread shrimp, cubed watermelon, and zucchini slices alternately onto the skewers, creating a colorful and balanced presentation.
  3. Preheat Grill: Heat your grill to medium-high heat. Prepare the grates by spraying with cooking spray or rubbing them with vegetable oil to prevent sticking.
  4. Grill Skewers: Place the skewers directly over the heat. Grill for 2-3 minutes per side, turning carefully. Shrimp are done when they become opaque, pink, and curl into a loose “C” shape, reaching an internal temperature of 145°F. Avoid overcooking, which causes shrimp to curl tightly.
  5. Finish and Serve: Remove the skewers from the grill. Drizzle with homemade balsamic glaze and extra virgin olive oil. Sprinkle crumbled feta cheese and fresh basil leaves over the top. Season with flaky sea salt and freshly ground black pepper. Serve immediately with lime wedges for spritzing.
  6. Enjoy and Share: Try your grilled watermelon shrimp skewers and share your feedback or star rating to help others enjoy this recipe as much as you do.

Notes

  • Do not marinate shrimp for more than 30 minutes to prevent rubbery texture.
  • Soak wooden skewers in water for at least 30 minutes before grilling to prevent burning.
  • Ensure shrimp are cooked to 145°F for food safety.
  • Use ripe, firm watermelon for best texture on the grill.
  • You can substitute Italian dressing with a homemade vinaigrette if preferred.
  • Adjust seasoning to taste, especially salt and pepper after grilling.
