Description

Delicious and easy grilled beefsteak tomatoes marinated in garlic and olive oil, perfectly charred for a smoky and flavorful side dish. Ideal for summer barbecues or as a vibrant addition to any meal.

Ingredients

Tomatoes

  • 4 beefsteak tomatoes (cut widthwise, along their equators)

Marinade

  • 2 tablespoons olive oil (plus more for greasing grates)
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

For Serving

  • Chopped parsley (optional)

Instructions

  1. Prepare the Marinade: In a large bowl, whisk together the olive oil, garlic powder, salt, and black pepper until well combined. Gently add the sliced tomatoes to the bowl and toss them carefully with the marinade to coat evenly, taking care not to break the tomato slices.
  2. Preheat the Grill: Heat your grill or grill pan to high heat. Before placing the tomatoes, lightly coat the grill grates with olive oil to prevent sticking and to achieve nice grill marks.
  3. Grill Tomatoes Cut Side Down: Place the tomatoes cut side down on the preheated grill. Close the lid and grill for 5 minutes to allow the tomatoes to char slightly and develop smoky flavors.
  4. Flip and Continue Grilling: Using a spatula, carefully flip the tomatoes so the skin side faces down on the grill. Cook with the lid open for another 2-3 minutes, allowing the skin to soften and the tomatoes to finish cooking.
  5. Serve: Remove the tomatoes carefully from the grill using a spatula. Serve immediately, garnished with freshly chopped parsley if desired, to enhance freshness and color.

Notes

  • Use firm, ripe beefsteak tomatoes for best results; they hold up well on the grill.
  • Ensure olive oil is used to grease the grill grates to prevent sticking and tearing of tomatoes.
  • Keep the lid closed during the first grilling phase to retain heat and cook the tomatoes evenly.
  • Serve as a side dish to grilled meats or as a flavorful addition to salads.
  • Adjust seasoning to taste, adding more garlic powder or black pepper if preferred.
