Ingredients
Sweet Potatoes
- 3 medium sweet potatoes, peeled and cut into 1½-inch thick wedges
- 2 tablespoons extra-virgin olive oil
- 1½ teaspoons kosher salt, divided
Herb Yogurt Dressing
- ¾ cup Greek yogurt
- 4 green onions, ends trimmed, roughly chopped
- ¼ cup fresh dill, plus more for serving
- 2 garlic cloves, smashed
- 10 large fresh basil leaves
- 2 tablespoons fresh lemon juice (from 1 lemon)
Instructions
- Preheat Grill: Begin by heating your grill to medium-high. This temperature is ideal to create a nice sear on the sweet potato wedges while cooking them through.
- Prepare Sweet Potatoes: Place the peeled and cut sweet potato wedges on a large, rimmed sheet pan. Drizzle with the extra-virgin olive oil and sprinkle with 1 teaspoon of kosher salt. Toss well to coat each piece evenly.
- Grill Sweet Potatoes: Arrange the sweet potatoes on the grill, placing them cut side down. Grill while turning every 2 to 3 minutes to ensure even cooking and avoid burning. Continue until the wedges are fork tender, about 15 minutes total.
- Make Herb Yogurt Dressing: While the sweet potatoes are grilling, combine Greek yogurt, green onions, fresh dill, smashed garlic cloves, basil leaves, lemon juice, and the remaining ½ teaspoon kosher salt in a blender or food processor. Blend until the mixture is smooth and well combined, approximately 1 to 3 minutes.
- Serve: Once grilled, transfer the sweet potato wedges to a serving platter. Drizzle generously with the herbaceous yogurt dressing and garnish with additional fresh dill. Serve family style and enjoy.
Notes
- Ensure the grill is properly preheated to avoid sticking.
- Turn the sweet potatoes frequently to get an even char without burning.
- You can substitute fresh basil with parsley if preferred.
- The dressing can be made ahead of time and chilled until ready to serve.
- For extra creaminess, feel free to use full-fat Greek yogurt.
