Description
Grilled Baby Potatoes with Dijon Mustard & Thyme is a flavorful and easy-to-make side dish featuring tender boiled baby Yukon Gold potatoes tossed in a zesty Dijon mustard and mayonnaise sauce, enhanced with fresh thyme and garlic, then grilled to achieve delicious smoky char marks. Perfect for summer barbecues or as a savory accompaniment to any meal.
Ingredients
Potatoes
- 1 lb baby Yukon Gold potatoes
Sauce & Seasoning
- ¼ cup mayonnaise (best quality such as Hellman's or Duke's)
- ¼ cup Dijon mustard
- 1 tablespoon + 1 teaspoon salt, divided
- ¼ teaspoon freshly ground black pepper
- 3 cloves garlic, minced
- 2 teaspoons chopped fresh thyme (rosemary or a combination also works well)
Garnish
- 1 tablespoon chopped fresh Italian parsley (optional)
Instructions
- Boil the potatoes: Place the baby Yukon Gold potatoes in a medium pot and add enough water to cover them by 1 inch (2.5 cm). Add 1 tablespoon of salt to the water. Bring to a boil over high heat, then reduce to a simmer and cook until the potatoes are tender when pierced with a sharp knife, about 12 minutes. Drain the potatoes and rinse them under cold water to cool.
- Preheat the grill: Prepare your grill by heating it to medium-high heat, ensuring it is clean and ready for cooking.
- Prepare the sauce: In a large bowl, whisk together the mayonnaise, Dijon mustard, remaining 1 teaspoon salt, black pepper, minced garlic, and chopped fresh thyme to create a flavorful dressing.
- Coat the potatoes: Slice the boiled potatoes in half and add them to the bowl with the Dijon mustard sauce. Gently toss to coat the potatoes evenly, taking care not to mash or break them.
- Grill the potatoes: Oil the grill grate lightly to prevent sticking. Arrange the coated potatoes cut-side down on the grill. Cover and grill for about 3 minutes, until you see nice grill marks. Using tongs, flip the potatoes and grill for another 3 minutes until golden and crisp all over.
- Serve: Transfer the grilled potatoes to a serving platter and sprinkle with chopped fresh Italian parsley if desired. Serve warm and enjoy as a delicious side dish.
Notes
- You can substitute fresh rosemary for thyme or use a combination of both for aromatic flavor.
- Be gentle when tossing the potatoes with the sauce to avoid mashing them.
- If you don’t have access to a grill, you can achieve a similar effect by broiling the coated potatoes in the oven, turning occasionally for char marks.
- This dish pairs wonderfully with grilled meats, seafood, or a fresh salad for a balanced meal.
- For a lighter version, you may substitute mayonnaise with Greek yogurt, though the taste and texture will differ slightly.
