Description

This vibrant Green Avocado Hummus is a creamy and refreshing twist on traditional hummus, blending the richness of avocado with fresh herbs and classic chickpeas for a nutritious and flavorful dip perfect for any occasion.

Ingredients

Main Ingredients

  • 1 (14.5-oz.) can chickpeas, drained, thoroughly rinsed and skins peeled
  • 1/3 cup tahini
  • 4 cloves garlic, roughly chopped
  • 3 Tablespoons fresh lemon juice
  • 1/2 cup parsley leaves
  • 1/2 cup cilantro leaves
  • 1/4 cup tarragon leaves
  • 2 Tablespoons chopped fresh chives
  • 1 medium avocado, peeled and pitted
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper

For Garnish

  • Extra virgin olive oil, for garnishing

Instructions

  1. Combine Ingredients: Add the chickpeas, tahini, garlic, lemon juice, parsley, cilantro, tarragon, chives, avocado, kosher salt, and black pepper to the bowl of a food processor to prepare the base mixture.
  2. Pureé Until Smooth: Process the mixture until smooth. For a creamier texture, gradually add 1 tablespoon of cold water or extra virgin olive oil while continuing to blend until the hummus reaches a smooth and creamy consistency.
  3. Serve and Garnish: Transfer the finished hummus to a serving bowl, drizzle generously with extra virgin olive oil, and sprinkle additional salt and pepper to taste before serving.

Notes

  • Peeling chickpeas helps create a smoother hummus texture but can be skipped for convenience.
  • Adjust the amount of fresh herbs to suit your taste preferences.
  • Add cold water or olive oil gradually to control the hummus consistency.
  • This hummus pairs well with pita bread, vegetable sticks, or as a spread on sandwiches.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
