Description

A refreshing and vibrant Greek Cucumber Salad combining crisp cucumbers, ripe Roma tomatoes, red onions, and briny olives, all tossed in a zesty lemon and red wine vinegar dressing with dried oregano and topped with creamy feta cheese. Perfect for a light appetizer or side dish, ready in just 10 minutes.

Ingredients

Vegetables

  • 2 cucumbers, peeled and chopped into 1/4 inch slices
  • 4-6 Roma tomatoes, chopped
  • 1/2 red onion, sliced

Dressing

  • 1/4 cup olive oil
  • 1 1/2 tablespoons lemon juice
  • 2 tablespoons red wine vinegar
  • 2 teaspoons dried oregano
  • Salt and pepper to taste (I like a lot of pepper)

Other

  • 1/2 cup crumbled feta cheese
  • Black olives, pitted and sliced, to taste

Instructions

  1. Prepare the vegetables: In a large bowl, combine the peeled and sliced cucumbers, chopped Roma tomatoes, and sliced red onions, ensuring all are evenly mixed.
  2. Make the dressing: In a smaller bowl, whisk together the olive oil, lemon juice, red wine vinegar, and dried oregano until well blended. Pour this dressing over the vegetables in the large bowl.
  3. Season and toss: Mix the salad thoroughly to coat all the vegetables evenly with the dressing. Season with salt and pepper according to your taste preference, adding extra pepper if desired.
  4. Add cheese and olives: Sprinkle the crumbled feta cheese and sliced black olives over the top of the salad. Gently mix again to distribute these toppings throughout.
  5. Chill and serve: Refrigerate the salad until ready to eat to allow the flavors to meld. Serve chilled and enjoy the crisp, savory flavors.

Notes

  • You can adjust the amount of lemon juice and vinegar depending on how tangy you like your salad.
  • For a vegan version, omit the feta cheese or substitute with a plant-based alternative.
  • Make sure to use firm cucumbers to avoid excess water release in the salad.
  • This salad pairs wonderfully with grilled meats or as a light lunch on its own.
  • Adding fresh herbs like parsley or mint can enhance freshness.
