Accompanied by creamy Tzatziki and garlic tahini sauces, this meal combines Mediterranean-inspired flavors for a satisfying and colorful dinner perfect for gatherings or weeknight meals.

Ingredients

Chicken Marinade

  • 1/4 cup extra virgin olive oil
  • 1 shallot, chopped
  • 4 cloves garlic, chopped
  • 2 teaspoons dried oregano
  • 1 teaspoon chipotle chili powder
  • 1 teaspoon honey
  • 1-3 tablespoons harissa sauce (or use hot sauce)
  • 1 tablespoon lemon zest
  • Salt and black pepper to taste
  • 1 1/2 pounds chicken breasts, cut into bite-size chunks

Fries

  • 4 russet potatoes, cut into ¼-inch-thick matchsticks
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper
  • Salt and black pepper to taste

Herb and Feta Topping

  • 1/2 cup mixed herbs (dill, basil, parsley)
  • 1 teaspoon lemon zest
  • 1 clove garlic, grated
  • 2 tablespoons toasted sesame seeds
  • 1/2 cup crumbled feta cheese

Sauces

  • 1-2 cups Tzatziki sauce
  • 1/2 cup garlic tahini (recipe in notes)

Instructions

  1. Prepare the marinade: In a bowl, combine the olive oil, chopped shallots, garlic, dried oregano, chipotle chili powder, honey, harissa sauce, lemon zest, salt, and black pepper. Add the chicken chunks and toss to coat evenly. If possible, let the chicken marinate for 10 minutes to allow the flavors to deepen.
  2. Preheat the oven: Set your oven to 450° F (232° C) to prepare for baking both the chicken skewers and fries.
  3. Thread and bake the chicken: Thread the marinated chicken pieces onto skewers and lay them out on a baking sheet. Bake in the preheated oven for 20-25 minutes, or until the chicken is lightly charred around the edges and cooked through.
  4. Prepare the fries: While the chicken bakes, toss the matchstick-cut potatoes with olive oil, garlic powder, cayenne pepper, salt, and black pepper. Spread them out in a single, even layer on another sheet pan.
  5. Bake the fries: Place the fries in the oven and bake for 15-20 minutes. Then, carefully flip the fries and continue baking for an additional 15 minutes until crispy and golden.
  6. Mix herbs and feta topping: In a small bowl, combine the mixed herbs (dill, basil, parsley), lemon zest, grated garlic, toasted sesame seeds, and crumbled feta cheese.
  7. Toss fries with feta mixture: Once the fries are baked, toss them on the sheet pan with the herb and feta mixture until well coated. Season with additional salt if needed.
  8. Serve: Plate the chicken skewers alongside the feta-topped fries. Serve with generous portions of Tzatziki sauce and garlic tahini on the side for dipping. Enjoy this vibrant and flavorful Mediterranean-inspired meal!

Notes

  • For garlic tahini, blend tahini paste with minced garlic, lemon juice, water, and a pinch of salt until smooth.
  • If you don’t have harissa sauce, substitute with your preferred hot sauce or chili paste.
  • For easier cleanup, line baking sheets with parchment paper or foil before roasting.
  • To keep skewers from burning in the oven, soak wooden skewers in water for 30 minutes prior to threading the chicken.
  • This recipe can be easily adapted for grilling instead of baking for an additional smoky flavor.
