Description

These Garlic Roasted Root Vegetable Fries are a delicious and healthy alternative to traditional potato fries, featuring a mix of flavorful root vegetables roasted to crispy perfection with garlic and a touch of seasoning. Perfect as a side dish or a snack, they offer a satisfying crunch and rich taste while being easy to prepare.

Ingredients

Root Vegetables

  • 1½ lbs. root vegetables of choice (parsnips, rutabagas, beets, carrots, sweet potatoes, etc.)

Seasoning & Oil

  • 1½ Tbsp. avocado oil or oil of choice
  • 3 cloves garlic, pressed or finely minced
  • Salt to taste (flaky sea salt preferred)
  • Black pepper to taste

Instructions

  1. Preheat the oven: Set your oven to 425℉ to prepare for roasting the vegetables.
  2. Prepare baking sheet: Line a large baking sheet with parchment paper to prevent sticking and ease clean-up, then set it aside.
  3. Prep vegetables: Wash, peel, and thoroughly dry the root vegetables. Using a sharp knife, slice them evenly into approximately ¼-inch thick pieces to ensure uniform cooking.
  4. Toss with oil: Place the cut vegetables on the lined baking sheet and drizzle with the avocado oil. Toss them gently to coat all pieces evenly.
  5. Add garlic and seasoning: Sprinkle the pressed or minced garlic over the oiled vegetables, arrange them in a single layer, and season with salt evenly over the top.
  6. Roast first round: Place the baking sheet on the middle rack of the preheated oven and roast for 15 minutes.
  7. Turn vegetables: Remove the pan carefully from the oven and flip the fries so the cooked sides face up to promote even crisping.
  8. Roast final round: Return the pan to the oven and roast for an additional 10-15 minutes until the fries are tender inside and crispy on the edges.
  9. Final seasoning and serve: Once roasted, sprinkle additional salt and black pepper as desired before serving the fries warm.

Notes

  • Choice of root vegetables is flexible; mix and match for varied flavors and colors.
  • Make sure vegetables are cut into similar sizes to ensure even cooking.
  • Use parchment paper for easier cleanup and to prevent sticking.
  • Roasting time may vary slightly depending on the thickness of the vegetables.
  • For extra crispiness, avoid overcrowding the baking sheet to allow proper air circulation.
