Description
This Garlic-Parmesan Roasted Cauliflower recipe offers a deliciously savory and slightly tangy way to enjoy cauliflower. Roasted in the oven to achieve tender florets with a light char, tossed with garlic, Parmesan cheese, paprika, and a splash of fresh lemon juice, it makes a perfect flavorful side dish for any meal.
Ingredients
Main Ingredients
- 1 medium head cauliflower, cut into florets (about 6 to 8 cups)
- 3 Tbsp. extra-virgin olive oil
- 1 1/2 tsp. paprika
- 3/4 tsp. kosher salt
- 1/2 tsp. cracked black pepper
- 3 garlic cloves, minced
- 2 to 3 Tbsp. grated Parmesan cheese
- Juice of 1/2 lemon
- 2 Tbsp. finely chopped fresh parsley
Instructions
- Preheat oven and baking sheet: Place a large rimmed baking sheet on the center rack of the oven and preheat the oven to 450ºF (232ºC) to ensure a hot surface for roasting the cauliflower.
- Season cauliflower: Cut the cauliflower into small florets and place them in a large mixing bowl. Add the olive oil, paprika, kosher salt, and cracked black pepper, then toss well to evenly coat all the florets with the seasoning.
- Roast cauliflower: Spread the seasoned cauliflower evenly on the preheated baking sheet in a single layer, making sure not to overcrowd the pan to allow for proper roasting. Roast for 20 to 25 minutes, tossing once halfway through, until the cauliflower is tender and lightly charred.
- Add garlic and Parmesan: Sprinkle the minced garlic and grated Parmesan cheese over the roasted cauliflower. Return the baking sheet to the oven and roast for an additional 5 minutes to allow the garlic to soften and Parmesan to melt slightly.
- Finish and serve: Remove the cauliflower from the oven, spritz it with the fresh lemon juice, and transfer to a serving bowl. Garnish with finely chopped fresh parsley and serve warm for best flavor.
Notes
- Ensure the cauliflower is cut into similar-sized florets for even cooking.
- Do not overcrowd the baking sheet, as this will steam the cauliflower instead of roasting it, preventing a nice char.
- Use fresh garlic for best flavor; you can adjust the quantity to your preference.
- Freshly grated Parmesan yields better melting and flavor than pre-grated varieties.
- For a sharper tang, add more lemon juice just before serving.
