Description

These Garlic Parmesan Duchess Potatoes are elegant, crispy on the outside, and creamy on the inside. Infused with roasted garlic and Parmesan cheese, this classic French-inspired side dish is perfect for holiday dinners or special occasions. The potatoes are mashed with butter, cream, and eggs, piped into decorative rosettes, and baked to golden perfection.

Ingredients

Garlic Butter

  • 1 tablespoon unsalted butter
  • 4 garlic cloves, minced
  • ⅛ teaspoon kosher salt

Potatoes

  • 3 pounds russet potatoes
  • 4 ⅛ teaspoons kosher salt, divided
  • 5 tablespoons unsalted butter
  • 2 large eggs
  • ⅓ cup heavy cream or half-and-half
  • ½ cup grated Parmesan cheese, divided
  • 1 tablespoon unsalted butter (for drizzling)

Instructions

  1. Prepare Garlic Butter: In a small saucepan, combine 1 tablespoon butter, minced garlic, and ⅛ teaspoon salt over low heat. Cook, stirring often, until the garlic turns golden brown. Remove from heat and set aside to infuse flavor.
  2. Boil Potatoes: Fill a pot with 2 quarts of cold water, add 1 tablespoon salt, then add the potatoes. Bring to a boil, reduce heat, and simmer until the potatoes are fork-tender, about 20-25 minutes.
  3. Drain and Dry Potatoes: Drain the cooked potatoes and return them to the warm pot. Heat lightly for about a minute to evaporate excess moisture, ensuring a fluffy mash.
  4. Mash Potatoes: Add 5 tablespoons butter to the potatoes and mash thoroughly using a potato masher or ricer until smooth and lump-free.
  5. Mix Ingredients: Whisk together the eggs and heavy cream. Fold this mixture into the mashed potatoes along with ⅓ cup Parmesan cheese, the garlic butter from step 1, and the remaining 1 teaspoon salt. Mix gently to combine all flavors evenly.
  6. Preheat Oven: Set your oven to 375°F (190°C) to prepare for baking the potatoes.
  7. Pipe Potatoes: Line a baking sheet with parchment paper. Transfer the potato mixture to a piping bag fitted with an open star tip. Pipe the mixture into decorative rosettes spaced at least ½ inch apart on the baking sheet.
  8. Add Butter: Melt the remaining 1 tablespoon butter and drizzle it generously over the potato rosettes to promote browning and flavor.
  9. Bake: Place the baking sheet in the preheated oven and bake for 25-30 minutes, or until the duchess potatoes are golden brown and heated through.
  10. Finish and Serve: Remove from oven and sprinkle with the remaining Parmesan cheese. Optionally garnish with fresh parsley. Serve hot as a delicious side dish.

Notes

  • Use russet potatoes for best texture and fluffiness.
  • Make sure to dry the potatoes well after boiling to avoid watery mash.
  • For a different flavor twist, try adding herbs like chives or thyme to the mashed potatoes.
  • These potatoes can be prepared ahead, refrigerated, and baked just before serving.
  • Use parchment paper to prevent sticking and ease cleanup.
