Ingredients
Steak and Seasoning
- 2-4 petite steaks
- Salt and pepper to taste
- Garlic powder to taste
- 1 tablespoon olive oil
Potatoes and Butter Mixture
- 2-4 pounds baby potatoes, diced
- 2-6 tablespoons salted butter (softened, about 1 tablespoon per steak plus 2 tablespoons for potatoes)
- 2 teaspoons minced garlic
- 1 teaspoon dried Italian herb blend
- 1 teaspoon chopped fresh thyme
- 1 teaspoon chopped fresh parsley
Instructions
- Preheat and prepare butter mixture: Preheat your oven to 400 degrees Fahrenheit. In a small bowl, combine the softened butter, minced garlic, and dried Italian herbs. Set this flavorful garlic herb butter aside for later use. Season both sides of the petite steaks generously with salt, pepper, and garlic powder.
- Sear the steaks: Heat a skillet over medium-high heat and drizzle in the olive oil. Place the steaks in the skillet and sear each side for 2-3 minutes until nicely browned. Remove the steaks from the skillet and place them on a plate to rest.
- Cook the potatoes: Add the diced baby potatoes to the same skillet. Season the potatoes generously with salt, pepper, and garlic powder. Sauté them for 3-5 minutes until they develop a nice brown crust. Push the potatoes to one side of the skillet.
- Combine and bake: Return the seared steaks to the other side of the skillet with the potatoes. Transfer the entire skillet to the preheated oven. Bake for 15-20 minutes, or until the potatoes are fork-tender and the steaks reach your desired doneness.
- Add garlic butter and herbs: As soon as you remove the skillet from the oven, place a dollop of the prepared garlic herb butter on each steak and the remaining butter on the potatoes. Allow the butter to melt over the food. Stir the potatoes gently to coat them evenly with the melted butter. Finally, sprinkle the chopped fresh thyme and parsley over the top before serving.
Notes
- Petite steaks such as sirloin, ribeye, or filet mignon work well for this recipe.
- Adjust the amount of butter according to your preference for richness.
- If baby potatoes are not available, small diced regular potatoes can be substituted.
- Cooking times may vary depending on steak thickness and oven performance—use a meat thermometer for perfect doneness.
