Ingredients
Eggs
- 6 large eggs
Vegetables & Peppers
- 2 tomatoes
- 1/2 onion (divided)
- 2 garlic cloves
- 1 red bell pepper
- 1 habanero pepper
Spices & Seasonings
- 1 tsp curry powder
- 1/2 tsp thyme
- 1 tbsp bouillon powder or cube
- Salt to taste
Oils & Others
- 1/2 cup olive oil
Instructions
- Blend the tomatoes and peppers: Coarsely blend the tomatoes, red bell pepper, habanero pepper, and half of the onion until chunky but well combined.
- Prepare aromatics: Chop the remaining half of the onion and mince the garlic cloves finely to be sautéed later.
- Whisk the eggs: Crack the eggs into a bowl and whisk them thoroughly until smooth and homogenous.
- Sauté onions and garlic: Heat the olive oil in a pan over medium heat, then sauté the chopped onions and minced garlic until fragrant and translucent, about 2-3 minutes.
- Add blended tomato mixture: Pour in the blended tomatoes and pepper mixture to the sautéed onions and garlic, stirring well to combine.
- Simmer the sauce: Let the sauce simmer on medium-high heat for about 5 minutes, or until most of the liquid evaporates and the mixture thickens.
- Season the stew: Stir in the curry powder, thyme, and bouillon powder. Cook the seasoned stew for another 2 minutes to allow flavors to meld.
- Cook the eggs: Pour in the whisked eggs, allow them to sit undisturbed for 2 minutes, then stir gently to combine them with the tomato sauce.
- Incorporate the eggs: Continue stirring the eggs into the sauce until they are fully cooked and evenly distributed, forming a slightly curdled texture typical of egg stews.
- Adjust seasoning: Taste the stew and add salt as needed to balance the flavors.
- Garnish and serve: Optionally garnish with fresh herbs like parsley or cilantro and serve hot as a side or main dish.
Notes
- Use fresh, ripe tomatoes for the best flavor and texture in the stew.
- You can adjust the heat by varying the amount of habanero pepper or substituting with milder peppers.
- Serve the egg stew with bread, rice, or your preferred staple to make it a complete meal.
- For a richer flavor, you can use palm oil instead of olive oil, traditional in Nigerian cuisine.
- Leftovers can be refrigerated and reheated gently on the stovetop.
