Description

This Egg Roll Bowl features a flavorful ground turkey and vegetable mixture inspired by the classic egg roll flavors, but served over hot rice for a quick, comforting, and healthier alternative. Using Trader Joe's Cruciferous Crunch blend adds a nutritious boost with a medley of fresh greens and crunchy vegetables, all brought together by a savory soy-ginger sauce and topped with crispy wonton strips for extra texture.

Ingredients

Sauce

  • 6 tablespoons low-sodium soy sauce
  • 3 tablespoons light brown sugar
  • 2 teaspoons cornstarch

Main Ingredients

  • 1 tablespoon vegetable oil
  • 2 teaspoons dark sesame oil
  • 3 cloves garlic, minced
  • 1 (1-inch) piece fresh ginger, peeled and grated
  • 1 (19.2-ounce) package ground turkey
  • 1 (10-ounce) package Trader Joe's Cruciferous Crunch
  • 1 large carrot, peeled and grated
  • 2 green onions, sliced, plus more for garnish
  • Hot cooked rice, for serving
  • Wonton strips, for garnish

Instructions

  1. Prepare the sauce: In a small bowl, whisk together the low-sodium soy sauce, light brown sugar, and cornstarch until fully combined and smooth. Set this sauce mixture aside for later use.
  2. Cook aromatics and turkey: Heat both vegetable oil and dark sesame oil in a large skillet or wok over medium-high heat. Add the minced garlic and grated ginger, cooking just until fragrant, about 30 seconds. Add the ground turkey, breaking it up with a spoon, and cook until it is crumbly and no longer pink, about 5-7 minutes.
  3. Add vegetables: Stir in the Trader Joe's Cruciferous Crunch mix, grated carrot, and most of the sliced green onions (reserve a small amount for garnish). Cook this mixture, stirring occasionally, until the vegetables are tender but still crispish, approximately 5 minutes.
  4. Thicken sauce: Pour the prepared soy sauce mixture into the skillet with the turkey and vegetables. Stir well and continue cooking until the sauce has thickened and evenly coats the mixture, around 2 minutes.
  5. Assemble and garnish: Spoon hot cooked rice into individual serving bowls. Divide the turkey and vegetable mixture evenly on top of the rice. Garnish each bowl with the reserved green onions and a handful of crispy wonton strips for added texture and flavor.

Notes

  • Using low-sodium soy sauce helps control the salt content, making this dish healthier.
  • You can substitute ground chicken or pork for the turkey if preferred.
  • If Trader Joe's Cruciferous Crunch is not available, use a blend of shredded cabbage, kale, Brussels sprouts, and broccoli slaw.
  • Wonton strips add a delightful crunch but can be omitted for a gluten-free option.
  • Serve immediately to enjoy the textures and warmth of the bowl.
