Ingredients
Soup Base
- 6 cups low sodium chicken broth
- 1-inch piece fresh ginger, sliced thin
- 1 clove garlic, minced
Main Ingredients
- 20 mini frozen wontons (chicken cilantro flavored recommended)
- 1 1/2 cups sliced shiitake mushrooms
- 4 baby bok choy, halved lengthwise and then halved
Seasonings & Garnish
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- Sliced green parts of scallions, for garnish
Instructions
- Bring Broth to Boil: In a large pot, bring the 6 cups of low sodium chicken broth to a rolling boil over medium-high heat.
- Infuse Ginger and Garlic: Smash the thinly sliced ginger with the side of a knife to release its flavors, then add the ginger and minced garlic to the boiling broth. Cover and simmer for 5 minutes to infuse the broth.
- Cook Bok Choy: Add the halved baby bok choy to the pot and cook partially for 5 minutes, allowing the greens to soften but retain some crunch.
- Add Wontons and Mushrooms: Add the frozen mini wontons and sliced shiitake mushrooms to the pot. Lower the heat to a gentle simmer and cook for 2 to 3 minutes until the wontons are heated through and the bok choy is tender and wilted.
- Season the Soup: Stir in 1 tablespoon soy sauce and 1 teaspoon sesame oil, mixing well to combine flavors.
- Serve and Garnish: Divide the soup evenly among four bowls and garnish each with sliced green scallions for a fresh, crisp finish.
Notes
- Using low sodium chicken broth helps control the salt content of the soup.
- Mini frozen wontons save preparation time and add a delicious filling flavor.
- Adjust the amount of soy sauce to taste if you prefer a saltier or milder soup.
- The ginger can be removed after simmering for a less intense ginger flavor.
- Fresh scallions add a nice crunchy texture and mild onion flavor as garnish.
