Ingredients
Soup Ingredients
- 2 Tbsp olive oil
- 4 cloves garlic
- 3 (15 oz.) cans cannellini beans
- 2 cups vegetable (or chicken) broth
- 1/2 tsp dried rosemary
- 1/4 tsp dried thyme
- 1 pinch crushed red pepper
- Freshly cracked black pepper to taste
Instructions
- Prepare the Beans: Pour one can of cannellini beans with its liquid into a blender and purée until smooth. Drain the remaining two cans of beans and set aside.
- Sauté Garlic: Mince the garlic cloves. In a soup pot, heat the olive oil over medium heat, then add the minced garlic. Sauté for about one minute until the garlic becomes very fragrant, being careful not to burn it.
- Combine Ingredients: Add the puréed beans, the two drained cans of beans, broth, dried rosemary, dried thyme, crushed red pepper, and freshly cracked black pepper to the pot. Stir everything well to combine.
- Simmer the Soup: Place a lid on the pot and increase the heat to medium-high to bring the soup to a boil. When boiling, reduce the heat to medium-low, remove the lid, and let the soup simmer for 15 minutes, stirring occasionally to prevent sticking.
- Thicken and Season: After simmering, lightly smash some of the beans in the pot to thicken the soup. Taste and add salt if needed, keeping in mind the saltiness of your broth. Serve the soup hot, ideally with crusty bread for dipping.
Notes
- You can use either vegetable or chicken broth depending on your preference.
- If more thickness is desired, smashing the beans further can enhance the creamy texture.
- Adjust the crushed red pepper amount to control the soup’s spiciness.
- For a dairy-free and vegetarian-friendly meal, ensure broth choice aligns with dietary needs.
- Fresh herbs can be used instead of dried for a more vibrant flavor, but quantities may need adjustment.
