Ingredients
Vegetables & Aromatics
- 4 large tomatoes, chopped into eight pieces each (stems removed)
- 1 medium jalapeño pepper, seeded and diced (adjust spice level as desired)
- ½ medium onion, peeled and roughly chopped
- 3 cloves garlic, peeled
Liquids & Seasonings
- 1 tablespoon rice vinegar (can substitute with apple cider vinegar or white vinegar)
- 1 tablespoon lime juice (or lemon juice)
- 1 teaspoon salt, more to taste
- ¼ cup finely chopped cilantro (optional)
Instructions
- Prepare the tomatoes: Chop each large tomato into about eight pieces, making sure to remove the green stems. Set aside for blending.
- Prep the onion and garlic: Peel the onion and chop it into large chunks. Peel the garlic cloves completely.
- Prepare the jalapeño: Slice off the top stem, then cut the jalapeño in half lengthwise. Carefully remove the seeds and the white membrane inside to reduce heat if preferred. Roughly chop the remaining flesh into pieces.
- Blend base ingredients: Add the jalapeño, onion, garlic, vinegar, and lime juice to a blender or food processor. Pulse on low to medium speed in short bursts until the pieces are roughly chopped to about pea-size.
- Add and blend tomatoes: Add the chopped tomatoes to the blender in small batches. Pulse to chop the tomatoes gradually. Blend longer if you prefer a smoother salsa texture.
- Season and finish: Stir in salt and adjust seasoning to taste. Mix in the chopped cilantro if using. Serve immediately or chill before enjoying.
Notes
- Adjust the amount of jalapeño or leave seeds for more heat, remove seeds entirely for mild salsa.
- Using a pulse method prevents over-blending and maintains a pleasant salsa texture.
- If you prefer a smoother salsa, blend for longer after adding the tomatoes.
- Salsa can be refrigerated for up to 3 days in an airtight container for optimal freshness.
- Substitute vinegar and citrus juices according to availability and preference.
