Description

This Crispy Hot Honey Feta Chicken recipe combines juicy, crispy fried chicken breasts with a spicy, sweet honey glaze and creamy melted feta cheese. The chicken is seasoned with a flavorful blend of spices, coated in panko breadcrumbs for extra crunch, and finished under the grill for a golden, bubbly feta topping. Perfect for a quick and indulgent dinner that packs heat and sweetness in every bite.

Ingredients

Hot Honey Sauce

  • 1/3 cup / 110g Honey
  • 1 1/2 tsp Hot Sauce (Frank's or Cholula recommended)
  • 3/4 tsp Chilli Flakes

Chicken and Seasoning

  • 2 x 250g / 9oz Chicken Breasts
  • 2 tsp Paprika
  • 1 tsp Salt
  • 1/2 tsp Onion Powder
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Dried Oregano
  • 1/2 tsp Black Pepper
  • 1/4 tsp Cayenne Pepper
  • 35g / 1/4 cup Plain Flour
  • 2 Eggs, beaten
  • 65g / 1 cup Panko Breadcrumbs
  • Vegetable Oil (6-8 tbsp, as needed for frying)

Topping

  • 200g / 7oz Feta, crumbled

Instructions

  1. Prepare Hot Honey Sauce:

Combine honey, hot sauce, and chilli flakes in a microwave-safe bowl and warm for about 20 seconds. Stir well and let cool. Alternatively, heat on the stove until simmering, then remove to cool. Adjust spice level by varying chilli flakes and hot sauce amounts.

  2. Slice and Season Chicken:

Horizontally slice each chicken breast through the center to create four even-sized pieces. In a small bowl, mix paprika, salt, onion powder, garlic powder, dried oregano, cayenne pepper, and black pepper to create the seasoning mix.

  3. Prepare Coating Stations:

Set up three shallow dishes for coating: first with flour combined with half the seasoning, second with beaten eggs, and third with panko breadcrumbs mixed with the remaining seasoning. Dredge each chicken piece through flour, then egg, then breadcrumbs, ensuring thorough coating at each stage. Place coated chicken on a tray.

  4. Fry the Chicken:

Heat enough vegetable oil in a large pan over medium-high heat to coat the base sufficiently. When the oil is hot and a breadcrumb sizzles immediately, fry chicken pieces in batches if necessary. Cook each side for 3-4 minutes until golden brown, crispy, and cooked through (white and piping hot inside). Transfer to a wire rack over the tray to drain excess oil.

  5. Add Feta and Grill:

Generously cover each fried chicken piece with crumbled feta cheese. Place under a preheated high grill until the feta starts turning golden and becomes buttery soft with a slight crisp on top.

  6. Serve:

Drizzle the warm hot honey sauce over the feta-topped chicken to taste. Serve immediately and store any leftover honey refrigerated in a tightly sealed container.

Notes

  • Adjust the amount of hot sauce and chilli flakes in the hot honey sauce to suit your preferred spice level.
  • Ensure oil is hot enough before frying to get a crispy coating without absorbing excess oil.
  • Use a wire rack to let fried chicken drain and stay crispy before adding feta.
  • Use panko breadcrumbs for extra crunch compared to regular breadcrumbs.
  • Leftover hot honey can be refrigerated and warmed gently before reuse.
