Description

A vibrant and flavorful Crispy & Spicy Honey Lime Chicken Avocado Salad featuring breaded chicken tenders coated in a zesty hot honey sauce, served over a fresh mix of romaine, avocado, and vegetables, topped with a creamy cilantro lime dressing. Perfect as a refreshing side dish or a light meal packed with crunch and spice balanced by creamy avocado and citrus notes.

Ingredients

Chicken

  • 8 breaded chicken tenders (or 24 chicken nuggets)
  • ¼ cup honey
  • ¼ cup avocado oil (or olive oil)
  • ¼ teaspoon ground ginger
  • ¼ teaspoon garlic powder
  • ¼ teaspoon cayenne powder
  • 2 teaspoon chili powder
  • ½ teaspoon salt
  • Black pepper to taste

Vegetables

  • 2 stalks romaine lettuce (chopped)
  • ½ red onion (diced)
  • 1 avocado (diced)
  • 2 stalks green onions (diced)
  • 1 handful cilantro (about ¼ cup, chopped)
  • ½ cup shredded carrots (about 6 baby carrots)
  • ¼ jalapeño (finely chopped and deseeded)
  • Juice from ½ a lime

Dressing

  • ⅓ cup cilantro lime dressing (or similar creamy dressing)

Instructions

  1. Cook the Chicken: Cook the 8 breaded chicken tenders in the oven or air fryer until crispy and fully cooked. The chicken should be golden brown and reach an internal temperature of 165°F (74°C) to ensure safety.
  2. Prepare the Vegetables: While the chicken cooks, chop and dice the romaine lettuce, red onion, avocado, green onions, cilantro, shredded carrots, and jalapeño. Add them all to a large mixing bowl to create the fresh salad base.
  3. Make the Hot Honey Sauce: In a medium bowl, mix together ¼ cup honey, ¼ cup avocado oil, ground ginger, garlic powder, cayenne powder, chili powder, salt, and pepper. This spicy-sweet sauce will coat the chicken perfectly.
  4. Coat the Chicken: Dice the crispy chicken tenders into bite-sized pieces, then add them to the hot honey sauce. Toss thoroughly to ensure every piece is evenly coated with the flavorful sauce.
  5. Combine Salad and Chicken: Add the sauced chicken to the bowl of vegetables. Pour in ⅓ cup of cilantro lime dressing and gently toss everything together. Finish by squeezing the juice from ½ a lime over the top to add a fresh citrusy brightness.
  6. Serve or Meal Prep: Serve immediately for best texture and flavor. If preparing for meal prep, store the salad and dressing separately to keep ingredients fresh and prevent sogginess.

Notes

  • Use either an oven or air fryer for cooking the chicken to achieve a crispy texture.
  • For meal prep, keep the dressing separate until ready to eat to maintain the salad’s freshness and prevent sogginess.
  • You can adjust the cayenne and chili powder quantities to control the heat level.
  • Substitute chicken nuggets if you want a quicker cooking option.
  • Avocado oil can be substituted with olive oil if desired.
  • The salad makes a great side dish, but adding more chicken can make it a complete meal.
