Ingredients
Main Ingredients
- 1-2 Salmon Filets (1 filet used, add more if desired)
- 6-8 oz Pasta (Cascatelli recommended for best texture)
- 1 Shallot & Chive Boursin round
- 8 oz Asparagus
Seasonings & Extras
- 1 tsp Paprika
- 1 tsp Salt
- 1 tsp Pepper
- 1 tsp Olive Oil
- ½ Lemon, juiced
Instructions
- Cook Pasta: Bring a large pot of salted water to a boil and cook your pasta according to the package instructions until al dente. Reserve ¼ cup of the pasta cooking water before draining the pasta and set aside. Meanwhile, preheat your oven to 400°F (200°C).
- Cook Salmon: Heat a skillet over medium-high heat and sauté the salmon filet for 2 minutes on each side to get a nice sear. Then transfer the salmon to an air fryer and cook at 350°F (175°C) for 10 minutes or until the internal temperature reaches 145°F (63°C), ensuring it is fully cooked but tender.
- Prepare Asparagus and Boursin: Slice the asparagus into bite-sized pieces. Spread the Boursin cheese in the center of a medium-sized baking dish and arrange the chopped asparagus around it. Drizzle the olive oil over the asparagus and cheese, then season with paprika, salt, and pepper evenly.
- Bake Vegetables and Cheese: Place the baking dish in the preheated oven and bake at 400°F (200°C) for 20 minutes. This allows the asparagus to become tender and the Boursin to soften and melt, creating a creamy base.
- Assemble the Dish: Once baked, add the cooked pasta, reserved pasta water, and cooked salmon into the baking dish with the asparagus and cheese. Pour the juice of half a lemon over the mixture. Gently toss everything together until well combined and creamy.
Notes
- You can substitute the Cascatelli pasta with other short pasta shapes like penne or fusilli if unavailable.
- If you don’t have an air fryer, you can finish cooking the salmon in the oven at 350°F for 10-12 minutes.
- Reserve pasta water to help loosen and create a smooth sauce when mixing.
- Adjust seasoning according to taste, adding more lemon juice if you prefer extra brightness.
- This dish can be served warm or at room temperature, making it versatile for meal prep.
