Description

Cornflake Candy is a simple, sweet treat combining crunchy cornflakes with a smooth peanut butter and sugar syrup, topped with festive sprinkles. This no-bake dessert is quick to prepare and perfect for holiday celebrations or anytime you want a delicious, crunchy candy.

Ingredients

Dry Ingredients

  • 3 cups cornflakes cereal

Wet Ingredients

  • ½ cup light corn syrup
  • ½ cup sugar
  • ½ cup peanut butter
  • 1 teaspoon vanilla extract

Toppings

  • Christmas sprinkles (optional)

Instructions

  1. Prepare Baking Sheet: Line a baking sheet with parchment paper and set it aside to prevent the candy from sticking and to make cleanup easier.
  2. Add Cornflakes: Place the cornflakes into a large mixing bowl, ready to be coated with the peanut butter mixture.
  3. Combine Ingredients: In a medium saucepan, mix together the sugar, light corn syrup, peanut butter, and vanilla extract to create the binding syrup for the candy.
  4. Cook Mixture: Heat the saucepan over medium heat, stirring frequently until the mixture starts to bubble, signaling the sugar is dissolving.
  5. Finish Cooking Syrup: Continue cooking the mixture for several more minutes until the sugar is fully dissolved and the mixture becomes smooth and homogenous.
  6. Mix with Cornflakes: Remove the saucepan from heat and pour the peanut butter mixture over the cornflakes in the bowl.
  7. Combine Evenly: Gently fold the peanut butter syrup into the cornflakes until all the cereal is evenly coated.
  8. Form Candy: Using a spoon, drop spoonfuls of the mixture onto the prepared baking sheet, shaping them into small mounds.
  9. Add Sprinkles: Optionally, sprinkle Christmas sprinkles on top of each mound to add a festive touch.
  10. Chill to Set: Place the baking sheet in the refrigerator and chill for 1 hour, or until the candy is firm and set.

Notes

  • You can substitute peanut butter with any nut or seed butter if there are allergies.
  • Use gluten-free cornflakes to make this recipe gluten free.
  • For easier removal, use a non-stick baking mat instead of parchment paper.
  • Press the candy mounds lightly to compact them if you prefer a denser texture.
  • Store leftovers in an airtight container in the refrigerator to keep fresh for up to one week.
