Description

Colcannon is a traditional Irish mashed potato dish that combines creamy Yukon gold or Russet potatoes with sautéed kale or cabbage and green onions. This comforting side dish is rich, flavorful, and easy to prepare, perfect for a cozy family meal.

Ingredients

Potatoes

  • 2 pounds Yukon gold or Russet potatoes, peeled and cut into chunks

Greens & Aromatics

  • 4 cups lightly packed chopped kale or cabbage
  • 3 green onions, thinly sliced (reserve some for garnish)

Dairy & Seasonings

  • 6 tablespoons unsalted butter (or ghee)
  • ½ cup milk (any type works)
  • Salt and pepper to taste

Instructions

  1. Boil Potatoes: Place the peeled and chunked potatoes in a large pot. Cover them with cold water, ensuring the water is about an inch above the potatoes. Bring to a boil and cook for 15-20 minutes or until the potatoes are fork-tender.
  2. Cook Greens: While the potatoes boil, melt the butter in a separate large pot over medium heat. Add the chopped kale or cabbage and sauté for 3-4 minutes until wilted. Add the green onions (reserving some for garnish) and cook for another minute, stirring to combine flavors.
  3. Mash Potatoes and Mix: Drain the potatoes well in a colander and return them to the pot with the cooked greens. Pour in the milk, then mash the potatoes and greens together until fluffy and well combined. Season with salt and pepper to taste.
  4. Serve: Transfer the colcannon to a serving bowl. Garnish with a sprinkle of the reserved green onions and a pat of butter on top for extra richness and presentation.

Notes

  • You can use either kale or cabbage depending on your preference; both work beautifully in this recipe.
  • Adjust the amount of milk to achieve your desired mashed potato consistency.
  • For a richer flavor, substitute milk with cream or add more butter.
  • Serve colcannon alongside Irish stews, grilled meats, or as a hearty vegetarian main with a poached egg on top.
