Description

This rich and creamy Coconut Syrup recipe is a perfect sweet topping to elevate your pancakes or waffles with a tropical twist. Combining butter, buttermilk, sugar, and coconut extract, it offers a luscious flavor profile with a smooth texture that's easy to prepare on the stovetop in under 20 minutes.

Ingredients

Syrup Ingredients

  • 1 stick butter (approximately 113g)
  • ¾ cup buttermilk (180ml)
  • 1 cup sugar (200g)
  • ⅛ tablespoon coarse sea salt (about 0.375 teaspoon)
  • ½ tablespoon baking soda (approximately 7.5ml)
  • ½ tablespoon coconut extract (approximately 7.5ml)
  • 1 tablespoon vanilla extract (15ml)

Serving Suggestions

  • 15 pancakes
  • Strawberries, rinsed and chopped (to taste)

Instructions

  1. Melt Butter and Combine Ingredients: In a medium saucepan, over low to medium heat, melt the butter along with the buttermilk and sugar. Stir constantly to prevent burning and allow the mixture to come to a boil.
  2. Boil the Mixture: Let the mixture boil gently for about 3 minutes, continuing to stir constantly to ensure the sugar dissolves and the syrup thickens slightly.
  3. Add Remaining Ingredients: Remove the saucepan from heat. Carefully add the coarse sea salt, baking soda, coconut extract, and vanilla extract. Be cautious as the baking soda will cause foaming.
  4. Cool and Thicken: Pour the mixture into another container to cool. Let it sit until it thickens to your desired syrup consistency, usually about 10-15 minutes.
  5. Serve: Drizzle the coconut syrup over warm pancakes and garnish with rinsed, chopped strawberries for a refreshing contrast.

Notes

  • Stir continuously while boiling to avoid the syrup burning at the bottom of the pan.
  • Adding baking soda causes foaming—add it slowly to prevent overflow.
  • Store leftover syrup in an airtight container in the refrigerator for up to one week.
  • Warm the syrup gently before serving if it becomes too thick after refrigeration.
  • For a dairy-free version, substitute butter with coconut oil and use a plant-based buttermilk alternative.
