Description

Classic popovers are light, airy, and golden puffed pastries made with just four simple ingredients. This easy-to-make recipe yields perfect, crispy-edged popovers with a tender, custardy interior that are ideal for breakfast, brunch, or alongside soups and salads.

Ingredients

Ingredients

  • 1 1/4 cups milk
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 4 large eggs

Instructions

  1. Preheat the oven: Preheat your oven to 425°F (220°C) to ensure it is hot enough for the popovers to rise beautifully.
  2. Prepare the pan: Lightly spray a 6-cup popover pan with cooking spray to prevent sticking and help with easy removal.
  3. Mix wet ingredients: Pour the milk into a large mixing bowl, creating the base for your batter.
  4. Add dry ingredients: Add the all-purpose flour and salt to the milk in the bowl.
  5. Combine batter: Whisk the mixture just until the flour is incorporated; avoid overmixing to keep the popovers light and airy.
  6. Add eggs: Whisk in the eggs one at a time, incorporating each fully before adding the next. Be careful not to overmix or scrape down the side of the bowl.
  7. Fill the popover cups: Divide the batter equally among the six prepared popover cups.
  8. Initial bake: Place the popover pan in the oven and bake at 425°F for 25 minutes to allow the popovers to rise and develop their characteristic puff.
  9. Reduce heat and continue baking: Lower the oven temperature to 325°F (163°C) and bake for an additional 10–15 minutes, until the popovers are a deep golden brown and fully cooked inside.
  10. Serve: Remove from the oven and serve the popovers immediately for best texture and flavor.

Notes

  • Do not open the oven door during the first 25 minutes of baking to prevent the popovers from collapsing.
  • Use fresh eggs and cold milk for best results.
  • The batter should be slightly lumpy; avoid overmixing which can result in dense popovers.
  • If you don’t have a popover pan, a muffin tin can be used, but the shape and rise may vary.
  • Serve popovers warm with butter, jam, or savory toppings.
