Description

This Cinnamon Swirl Crunch Quick Bread offers a delightful combination of a tender, moist crumb with a sweet cinnamon swirl throughout. Topped with a buttery brown sugar crunch and white chocolate chips for an extra layer of indulgence, this quick bread is perfect for breakfast, snacks, or dessert. It’s quick to prepare, uses common pantry ingredients, and bakes to golden perfection with a warm, comforting aroma.

Ingredients

Bread Batter

  • 1/4 cup granulated sugar
  • 2 teaspoons cinnamon
  • 1/3 cup melted coconut oil
  • 1/2 cup plain Greek yogurt
  • 1 large egg
  • 1 tablespoon vanilla extract
  • 1/2 cup maple syrup or honey
  • 2/3 cup milk
  • 2 cups all-purpose flour or whole wheat pastry flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 3/4 cup white chocolate chips or chopped chunks

Cinnamon Sugar Swirl

  • 1/4 cup granulated sugar (from batter ingredients)
  • 2 teaspoons cinnamon (from batter ingredients)

Crunch Topping

  • 1/2 cup brown sugar
  • 1 tablespoon all-purpose flour
  • 1 tablespoon cinnamon
  • 2 tablespoons salted butter, melted

Instructions

  1. Prepare the oven and pan. Preheat your oven to 350°F (175°C). Butter a 9×5 inch loaf pan thoroughly to prevent sticking and ensure easy removal after baking.
  2. Make cinnamon sugar. In a small bowl, combine the 1/4 cup granulated sugar and 2 teaspoons cinnamon to create the cinnamon sugar mixture that will be used for the swirl inside and on top of the bread.
  3. Mix the wet ingredients. In a large bowl, stir together the melted coconut oil, maple syrup (or honey), Greek yogurt, egg, vanilla extract, and milk until the mixture is smooth and well combined.
  4. Add dry ingredients to the batter. To the wet mixture, add the flour, baking soda, and kosher salt. Mix gently until just combined to avoid overmixing, which can toughen the bread. Then fold in the white chocolate chips evenly.
  5. Layer the batter and cinnamon sugar. Spoon half of the batter into the prepared loaf pan, smoothing it out. Sprinkle half of the cinnamon sugar evenly over the batter, reserving 1 tablespoon to use as topping. Spoon the remaining batter over this layer and then sprinkle the remaining cinnamon sugar on top.
  6. Prepare the crunch topping. In a separate small bowl, mix the melted salted butter, brown sugar, flour, and cinnamon until clumps form. Spoon these clumps evenly over the top of the loaf batter and cinnamon sugar layer to create the crunchy topping.
  7. Bake the bread. Place the loaf pan in the preheated oven and bake for 55-60 minutes, or until the center is just set and a toothpick inserted into the center comes out clean or with a few moist crumbs.
  8. Cool and serve. Remove the bread from the oven and allow it to cool in the pan for a few minutes before transferring to a wire rack or slicing. Enjoy warm, optionally with a slather of salted butter for extra richness.

Notes

  • Use whole wheat pastry flour for a slightly nuttier flavor and more fiber without compromising texture.
  • White chocolate chips add sweetness and contrast, but you can substitute with regular chocolate chips or nuts if preferred.
  • If you don’t have coconut oil, you can use melted butter or a neutral oil like vegetable oil.
  • Make sure not to overmix the batter; overmixing activates gluten and can make the bread dense.
  • This bread stores well at room temperature wrapped tightly for 2-3 days or can be frozen for longer storage.
