Description

This delightful Egg Cheesecake recipe transforms hollow chocolate Easter eggs into an adorable and delicious no-bake cheesecake dessert. Combining a crunchy cookie base with a creamy, whipped cream cheese filling, these individual cheesecakes are perfect for Easter celebrations or any special occasion. The dessert is elegantly decorated with melted chocolate, cookie crumbs, and mini chocolate eggs, making it as visually appealing as it is tasty.

Ingredients

Chocolate Egg Shells and Decoration

  • 2 hollow chocolate eggs (3.5 oz / 100 g Cadbury milk chocolate eggs)
  • Melted chocolate (for drizzling)
  • Mini chocolate eggs (for garnish)
  • Reserved cookie crumbs (optional, for decoration)

Cookie Base

  • 3/4 cup (75 g / 2.6 oz) Graham cracker or digestive biscuits, crushed
  • 2 tbsp (30 g / 1 oz) butter, melted

Cheesecake Filling

  • 1 1/2 cups (340 g / 12 oz) cream cheese, full fat, softened
  • 1/2 cup (60 g / 2 oz) powdered (confectioners’/icing) sugar
  • 3/4 cup (170 g / 6 oz) heavy (double/whipping) cream
  • 1 tsp vanilla extract

Instructions

  1. Split the Easter eggs: Unwrap the chocolate eggs and carefully separate each egg into two halves by scoring along the seamline with a sharp paring knife dipped in hot water. Work slowly to avoid cracking the shells.
  2. Make the cookie base: In a large bowl, combine the crushed Graham crackers or digestive biscuits with the melted butter. Mix thoroughly until the crumbs are evenly coated and have a wet sand-like texture.
  3. Prepare the crust in the eggshells: Divide the cookie crumb mixture between the chocolate egg halves. Gently press down with the back of a spoon or fingertips to compress the base without breaking the shells. Optionally reserve some crumbs for decorating. Chill in the fridge for 15 minutes.
  4. Mix the cheesecake filling: Beat the softened cream cheese, powdered sugar, and vanilla extract together until smooth and creamy, scraping the bowl’s sides as needed. In a separate bowl, whip the heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture until well combined.
  5. Fill and chill: Spoon the cheesecake filling into each prepared eggshell on top of the cookie base. Smooth out the tops with a butter knife or offset spatula.
  6. Decorate and set: Drizzle melted chocolate over the filled eggs, sprinkle with reserved cookie crumbs, and place a few mini chocolate eggs on top for garnish. Refrigerate for at least 2 hours until set before serving.

Notes

  • Work carefully when splitting the chocolate eggs to keep the shells intact.
  • Use full-fat cream cheese and heavy cream for the best creamy texture.
  • Optionally reserve some cookie crumbs for a decorative finish.
  • Make sure to chill the dessert properly to allow the cheesecake to set firmly within the chocolate eggs.
  • This recipe is a no-bake dessert, perfect for springtime celebrations.
