Description

These Chocolate Dipped Orange Slices are a delightful treat combining the tangy sweetness of candied orange slices with the rich bitterness of dark chocolate. The oranges are slowly simmered in a simple syrup until translucent and then dipped in melted dark chocolate, creating a perfect balance of flavors and textures. Ideal as a festive snack or a sophisticated dessert garnish.

Ingredients

Orange Slices

  • 2 oranges
  • 2 cups water
  • 2 cups sugar

Chocolate Coating

  • 3 ounces dark chocolate

Instructions

  1. Prepare Oranges: Wash the oranges thoroughly. Cut off the ends and discard them. Slice the remaining orange into ¼ inch thick slices to ensure even cooking and proper syrup absorption.
  2. Make Simple Syrup: In a large pot over medium-high heat, combine the water and sugar. Stir continuously until all the sugar dissolves completely, then bring the mixture to a gentle boil.
  3. Simmer Orange Slices: Add the orange slices to the boiling syrup. Reduce the heat to medium-low to maintain a gentle simmer. Cook the oranges until they become translucent, turning them over at least once during cooking. This process takes approximately 40 to 60 minutes depending on the thickness and size of the slices.
  4. Cool and Harden Orange Slices: Carefully remove the orange slices from the syrup and place them on a wire rack set over a baking sheet lined with parchment paper. Allow the slices to cool and harden for at least 2 hours, or preferably overnight to achieve optimum texture.
  5. Melt Chocolate: Using a double boiler, gently melt the dark chocolate until smooth and glossy, taking care to avoid overheating which can cause the chocolate to seize.
  6. Dip Orange Slices: Dip half of each orange slice into the melted dark chocolate, ensuring even coating. Place the dipped slices onto parchment paper or a silicone mat to set. Allow the chocolate to harden completely, which will take at least one hour at room temperature.
  7. Store Properly: Once hardened, store the chocolate dipped orange slices in an airtight container. They can be kept at room temperature for up to one week or refrigerated for up to one month to maintain freshness.

Notes

  • Use thick-skinned, seedless oranges for best results and easier slicing.
  • The candied orange slices can be made ahead and stored before dipping in chocolate.
  • If you don’t have a double boiler, melt the chocolate in a microwave in short bursts, stirring frequently.
  • Ensure orange slices are completely dry before dipping in chocolate to avoid chocolate from seizing.
  • For a decorative touch, sprinkle lightly with sea salt or crushed nuts immediately after dipping.
