Description

This hearty Chili Nachos recipe combines seasoned ground beef, tomato sauce, pinto beans, diced tomatoes with green chiles, and chili mix, all simmered together and enriched with creamy Velveeta cheese and heavy cream. Served hot over crunchy corn chips and optionally topped with sour cream, sliced jalapenos, and lime wedges, this crowd-pleasing dish delivers comforting flavors in every bite, perfect for game day or casual gatherings.

Ingredients

Meat and Protein

  • 2-1/2 pounds ground beef

Chili Base

  • 3 cans (15 ounces each) tomato sauce
  • 2 cans (15 ounces each) pinto beans, rinsed and drained
  • 1 can (10 ounces) diced tomatoes and green chiles, undrained
  • 2 envelopes chili mix

Dairy

  • 2 pounds Velveeta, cubed
  • 1 cup heavy whipping cream

Chips and Toppings

  • 2 packages (16 ounces each) corn chips
  • Optional: Sour cream
  • Optional: Sliced jalapeno
  • Optional: Lime wedges

Instructions

  1. Brown the beef: In a Dutch oven over medium heat, cook the ground beef until it is no longer pink, breaking it up occasionally with a spoon into crumbles. Once browned, drain off excess fat carefully to avoid greasy texture in the chili.
  2. Add the remaining ingredients: To the cooked beef, add the tomato sauce, rinsed and drained pinto beans, undrained diced tomatoes with green chiles, and chili mix packets. Stir well to combine all ingredients.
  3. Cook the chili: Continue cooking the mixture in the Dutch oven over medium heat until it is heated through, stirring frequently to prevent sticking.
  4. Add cheese and cream: Stir in the cubed Velveeta cheese and heavy whipping cream into the chili. Cook, stirring often, until the cheese has completely melted and the mixture becomes creamy and smooth.
  5. Serve the chili over corn chips: Spoon the hot, creamy chili generously over bowls filled with crunchy corn chips.
  6. Add optional toppings: If desired, garnish with sour cream, sliced jalapenos, and lime wedges to add fresh, tangy, and spicy elements to the dish.

Notes

  • Draining the excess beef drippings is essential to prevent the chili from becoming greasy and to maintain a smooth, creamy texture.
  • If you prefer a spicier chili, increase the amount of diced green chiles or add more chili mix.
  • Velveeta cheese melts smoothly, creating a creamy chili; however, you can substitute with processed cheese if preferred.
  • Serving immediately after combining all ingredients ensures the corn chips stay crisp and not soggy.
  • This recipe serves approximately 16, making it great for parties or large gatherings.
