Ingredients
Sauce for Chicken Filling
- ¼ cup hoisin sauce
- 2 Tbsp soy sauce
- 1 Tbsp rice vinegar
- 1 Tbsp toasted sesame oil
- 1 Tbsp fresh grated ginger
- 2 cloves garlic, minced
Vegetables and Toppings
- 1 red bell pepper, chopped
- 8 oz canned water chestnuts, drained and chopped
- 2 green onions, sliced
- ¼ cup peanuts, roughly chopped
Main Ingredients
- 1 Tbsp cooking oil
- 1 lb ground chicken (can substitute ground turkey)
- 12 lettuce leaves
Peanut Lime Dressing
- 1½ Tbsp natural style peanut butter
- ½ Tbsp brown sugar
- 1 clove garlic, minced
- ¼ tsp fresh grated ginger
- 1 medium lime, juiced (about 1 Tbsp lime juice)
- 1 tsp soy sauce
- 2 Tbsp neutral oil (such as vegetable or canola oil)
Instructions
- Prepare the Sauce: In a small bowl, combine the hoisin sauce, soy sauce, rice vinegar, toasted sesame oil, fresh grated ginger, and minced garlic. Stir well and set aside for later use.
- Chop Vegetables and Nuts: Chop the red bell pepper and water chestnuts into similar sized pieces. Slice the green onions and give the peanuts a rough chop. Set all aside for assembly.
- Cook Ground Chicken: Heat a large skillet over medium heat and add the cooking oil. Once the oil is hot, add the ground chicken. Crumble and cook it thoroughly until it is browned and no longer pink.
- Saute Vegetables: Add the chopped red bell pepper and water chestnuts to the skillet with the chicken. Sauté for about two minutes until slightly tender.
- Combine Sauce and Chicken Mixture: Pour the prepared hoisin-soy sauce mixture into the skillet. Mix well and cook together for another two minutes, allowing the sauce to infuse into the chicken and vegetables. Remove from heat.
- Top with Green Onions and Peanuts: Sprinkle the sliced green onions and chopped peanuts over the chicken mixture to add crunch and freshness.
- Make the Peanut Lime Dressing: In another small bowl, whisk together natural peanut butter, brown sugar, minced garlic, grated ginger, lime juice, soy sauce, and neutral oil until smooth. Set aside.
- Assemble the Wraps: Spoon about ⅓ cup of the chicken and vegetable mixture into each lettuce leaf. Drizzle a little peanut lime dressing over the filling for a bright and creamy finish.
- Serve: Enjoy the wraps immediately for best freshness and texture.
