Description

A quick and healthy Chicken and Broccoli Stir Fry featuring tender chicken breast, crisp broccoli, mushrooms, and onions coated in a flavorful savory sauce made with soy, ginger, and garlic. Perfect for a 30-minute weeknight dinner served over rice.

Ingredients

Proteins

  • 1 lb chicken breast (boneless skinless), cut into 3/4" pieces

Vegetables

  • 1 lb broccoli, cut into florets (about 5 cups)
  • 1 small yellow onion, sliced into strips
  • 1/2 lb white button mushrooms, thickly sliced

Sauces & Oils

  • 2 Tbsp cooking oil (extra light olive oil), divided
  • 2/3 cup low sodium chicken broth
  • 3 Tbsp low sodium soy sauce (use Tamari for gluten free), or to taste
  • 2 Tbsp light brown sugar (packed) or honey to taste
  • 1 Tbsp corn starch
  • 1 Tbsp sesame oil

Spices & Aromatics

  • 1 tsp fresh ginger, peeled and grated (lightly packed)
  • 1 tsp garlic (2 small cloves), grated
  • 1/4 tsp black pepper, plus more to season chicken

Instructions

  1. Make the Sauce: In a small bowl, whisk together the chicken broth, soy sauce, brown sugar, corn starch, sesame oil, grated ginger, grated garlic, and black pepper until the sugar and corn starch are fully dissolved. Warm broth can help dissolve the sugar faster. Set the sauce aside.
  2. Prepare Chicken: Cut the chicken into bite-sized pieces about 3/4" thick. Season lightly with black pepper. Heat 1 tablespoon of cooking oil in a large heavy skillet or wok over medium-high heat. Add the chicken pieces in a single layer and let them sear undisturbed for 1 minute to develop color. Stir fry and cook for another 5 minutes until golden brown and just cooked through. Remove chicken to a bowl and loosely cover to keep warm.
  3. Stir Fry Vegetables: In the same skillet, add the remaining 1 tablespoon of cooking oil along with broccoli florets, sliced onion, and sliced mushrooms. Stir fry for about 3 minutes until the mushrooms soften and the broccoli becomes crisp-tender. Then reduce the heat to medium-low.
  4. Add Sauce: Give the prepared sauce a quick stir to remix any settled starch and pour it over the vegetables. Let it simmer for 3 to 4 minutes until the sauce thickens and the garlic and ginger mellow in flavor. If the sauce is too thick, add water one tablespoon at a time to thin it out.
  5. Combine and Serve: Return the cooked chicken to the pan and stir for another 30 seconds until heated through and well coated in sauce. Adjust soy sauce to taste if needed. Serve immediately over hot rice for a complete meal.

Notes

  • Use Tamari instead of soy sauce for a gluten-free version.
  • Honey can be substituted for brown sugar as a natural sweetener.
  • Be careful not to overcook the broccoli to keep it crisp and vibrant.
  • Serve over steamed rice, quinoa, or noodles as preferred.
  • For extra heat, add a pinch of red pepper flakes in the sauce.
