Description

This Cheesy Smashed Broccoli recipe features tender roasted broccoli florets smashed flat, topped with melted Parmesan cheese and a touch of spice and lemon. Roasted to crispy perfection then smashed and baked again with cheese, it's a flavorful, easy side dish perfect for any meal.

Ingredients

Broccoli

  • 1 bunch of broccoli (about 1 ½ pounds) or 16 ounces broccoli florets

Seasonings & Topping

  • 1 ½ tablespoons extra-virgin olive oil
  • Scant ½ teaspoon fine salt, more to taste
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 2 ounces (¾ cup) finely grated Parmesan cheese
  • ¼ teaspoon red pepper flakes (optional, for a kick)
  • Freshly ground black pepper
  • 1 to 2 teaspoons fresh lemon juice, to taste

Instructions

  1. Preheat oven: Preheat your oven to 425°F (220°C) and position a rack in the middle. Line a large, rimmed baking sheet with parchment paper to prevent sticking, which is crucial for this recipe's success.
  2. Prepare broccoli: Trim and cut broccoli florets into pieces about 2 to 3 inches wide and 1 inch thick or less, including some stems. Halve larger florets for uniform size to ensure even roasting.
  3. Season broccoli: Place broccoli florets on the prepared baking sheet. Drizzle with olive oil and sprinkle with salt, garlic powder, and onion powder. Toss to coat evenly, adding a small splash of oil if needed. Spread florets evenly on the pan.
  4. Roast broccoli: Roast for 18 to 21 minutes until stems are fork-tender. Remove from oven and place on a stable heat-safe surface.
  5. Smash florets: Using a sturdy, flat-bottomed jar or glass, gently smash each broccoli floret until the stems splay out. Slide the jar forward to release the broccoli, ensuring they remain in place on the pan.
  6. Add cheese and spices: Arrange smashed broccoli evenly on the pan. Distribute grated Parmesan over each piece, then sprinkle with red pepper flakes (if using) and freshly ground black pepper.
  7. Bake with cheese: Return to the oven and bake for 5 to 7 minutes until cheese is melted and starts to turn golden.
  8. Finish and serve: Drizzle fresh lemon juice over the warm broccoli and serve immediately. Leftovers can be refrigerated for up to 4 days but will lose crispness over time.

Notes

  • Use parchment paper to prevent cheese from sticking and help with easy cleanup.
  • Adjust red pepper flakes according to your tolerance for spice or omit for a milder dish.
  • Smashed broccoli crisps up nicely but will soften and lose some texture when refrigerated.
  • Freshly grated Parmesan melts better and provides a more authentic flavor than pre-grated cheese.
  • Serve as a side dish complementing grilled meats or vegetarian mains.
