Description

Delicious Cheese and Onion Knishes featuring a savory filling of caramelized onions and farmer's cheese wrapped in flaky crescent roll dough and baked to golden perfection. Perfect as a comforting snack or appetizer, these knishes combine rich, creamy cheese with sweet, tender onions in every bite.

Ingredients

Dough

  • 2 tubes (8 oz each) refrigerated crescent roll dough

Filling

  • 2 cups farmer's cheese
  • 3 large onions, sliced
  • 3 tablespoons vegetable oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper

For brushing

  • 1 egg, beaten

Instructions

  1. Cook Onions: Heat the vegetable oil in a large pan over medium heat. Add the sliced onions and cook for about 20 minutes, stirring often, until they turn golden brown and caramelized. Remove from heat and allow to cool completely.
  2. Prepare Filling: In a bowl, combine the cooled caramelized onions with the farmer's cheese, salt, and black pepper. Mix well until fully incorporated.
  3. Prepare Dough: Unroll the crescent roll dough and carefully separate it into 8 equal pieces.
  4. Fill and Shape: Place approximately 2 tablespoons of the cheese and onion filling in the center of each dough piece. Bring the corners together over the filling and pinch firmly to seal, ensuring the filling is enclosed.
  5. Prepare for Baking: Place each knish seam-side down on a greased baking sheet. Using a brush, coat the tops of the knishes evenly with the beaten egg to achieve a golden crust.
  6. Bake: Preheat your oven to 375°F (190°C). Bake the knishes for 15 to 20 minutes or until they are golden brown and puffed.
  7. Serve: Remove from oven and allow to cool slightly. Serve the knishes warm or at room temperature for the best flavor and texture.

Notes

  • Ensure the onions are fully cooled before mixing with cheese to prevent dough from becoming soggy.
  • You can substitute farmer's cheese with ricotta or cream cheese if unavailable.
  • The beaten egg wash helps create a shiny, golden crust; for a vegan option, you may use plant-based milk or omit it.
  • Knishes can be stored in an airtight container and reheated in the oven to maintain crispness.
  • For added flavor, consider mixing herbs like chives or parsley into the filling.
