Description
Char Grilled Creamed Corn is a smoky, creamy side dish that combines the sweet flavor of grilled corn with a rich, cheesy cream sauce. Perfect for summer barbecues or as a comforting accompaniment to grilled meats, this dish features tender corn kernels charred to perfection on the grill and blended into a luscious, creamy base with butter, cream cheese, and heavy cream.
Ingredients
Corn
- 5 ears corn (husks and silk removed)
Cream Sauce
- 2 Tablespoons butter
- 1 Tablespoon all-purpose flour
- ½ cup milk
- ½ cup heavy cream
- 4 ounces cream cheese
Seasoning
- Hey Grill Hey Beef Rub (to taste, or salt and pepper)
Instructions
- Preheat the grill: Set your grill to medium-high heat, aiming for around 400 degrees Fahrenheit. This will ensure the corn cooks evenly and develops that perfect char.
- Grill the corn: Place the husked corn directly on the grill grates. Close the lid and grill for about 10 minutes, turning occasionally, until the kernels are tender and have slight char marks for that smoky flavor.
- Shell the corn: Remove the corn from the grill and let it cool for approximately 5 minutes. Using a sharp knife, carefully slice the kernels off the cobs into a large bowl.
- Make the corn base: Heat a large cast iron skillet over medium heat. Add the butter and allow it to melt completely. Once melted, add the grilled corn kernels to the skillet and cook for 3–4 minutes to combine flavors.
- Make the cream sauce: Sprinkle the flour over the corn and stir gently with a whisk for about 1 minute to cook out the raw flavor. Slowly pour in the milk, stirring continuously to avoid lumps. Let the mixture simmer for 2–3 minutes until slightly thickened. Reduce the heat to low, then add the heavy cream and cream cheese. Stir gently until the cream cheese melts and the sauce is smooth and creamy, about 3–5 minutes.
- Season, serve, and enjoy: Season the creamed corn with Hey Grill Hey Beef Rub or salt and pepper to taste. Give everything a final stir, transfer to a serving dish, and serve warm alongside your favorite grilled meats.
Notes
- Be careful when cutting the kernels off the cob to avoid injury.
- You can substitute cream cheese with mascarpone for a slightly different flavor.
- Adjust seasoning according to taste; the beef rub adds a smoky and spicy kick.
- This dish pairs excellently with grilled steaks, chicken, or pork.
- Use fresh ears of corn for the best flavor and texture.
