Ingredients
Soup Base
- 1 tablespoon butter
- 2 tablespoons olive oil
- 1 1/2 pounds carrots (680g), rinsed, peeled, and thinly sliced
- 1 large leek (white and light green parts only), rinsed, peeled, and thinly sliced
- 1 1/2 tablespoons finely chopped or grated fresh ginger (15g)
- 4 cups vegetable stock (950ml)
- 1/4 teaspoon freshly grated nutmeg
- Kosher salt, to taste
- Freshly ground black pepper, to taste
Toppings
- 1/4 cup crème fraîche (55g)
- 1/2 cup pistachios (60g), shelled and roughly chopped
Instructions
- Prepare Vegetables: Rinse, peel, and thinly slice the carrots. Rinse the leek and remove its outer layer, then cut it in half lengthwise and slice into thin half moons. Soak leek slices in cold water for 10 minutes to remove any dirt, then lift them out with a slotted spoon and pat dry.
- Heat Fats: Melt the butter and olive oil together in a large saucepan over medium heat, creating a flavorful base for the soup.
- Sauté Vegetables and Ginger: Add the carrots, leeks, ginger, and nutmeg to the pan. Cook over medium heat for 5 to 7 minutes, stirring frequently to prevent browning. Reduce heat if vegetables start to brown.
- Add Stock and Simmer: Pour in the vegetable stock and bring the mixture to a gentle simmer over medium to medium-low heat.
- Cook Soup: Cover the pan and let the soup simmer gently for 20 to 25 minutes until the carrots are completely tender.
- Prepare Pistachios: While the soup simmers, shell the pistachios and chop them roughly to prepare them for garnish.
- Blend Soup: Once the carrots are tender, use an immersion blender to puree the soup until smooth. Alternatively, cool the soup slightly and blend in batches in a regular blender until smooth.
- Season: Add kosher salt and freshly ground black pepper to taste, adjusting seasoning as desired.
- Serve: Ladle the soup into bowls, then top each with a dollop of crème fraîche, a spoonful of chopped pistachios, a light sprinkle of nutmeg, and a dash of freshly ground black pepper.
Notes
- Use fresh ginger for the best flavor; adjust the quantity based on your desired level of warmth and spice.
- If you don’t have an immersion blender, a regular blender will work fine but blend in smaller batches and be cautious of hot liquids.
- For a dairy-free option, omit the crème fraîche or substitute with a coconut cream alternative.
- Soaking the leek slices in cold water ensures they are clean of grit and sand.
- Crushed pistachios add a nice textural contrast and a nutty flavor to the smooth soup.
