Description

This Bruschetta Dip combines the fresh, vibrant flavors of classic Italian bruschetta with a creamy, tangy cheese base. Perfect as a party appetizer or a snack, it features ripe tomatoes, fresh basil, garlic, and balsamic vinegar layered on a whipped blend of crème fraîche, Greek yogurt, and Parmesan cheese. Serve it with bread or crackers for an irresistible treat.

Ingredients

Bruschetta Topping

  • 4 on-the-vine tomatoes (stems and seeds removed, chopped; about 2 cups)
  • 2 tablespoons chopped fresh basil
  • 1 clove garlic (minced)
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons extra virgin olive oil
  • Salt (to taste)
  • Freshly ground black pepper (to taste)

Cheese Mixture

  • 7.5 ounces crème fraîche (can substitute with sour cream or full-fat Greek yogurt)
  • ¼ cup plain Greek yogurt
  • ¼ cup shredded parmesan cheese (use vegetarian-labeled if needed)
  • 2 tablespoons chopped fresh basil
  • 2 cloves garlic (minced)

Serving

  • Bread or crackers (for serving)

Instructions

  1. Prepare the Bruschetta Topping: In a mixing bowl, combine the chopped tomatoes, 2 tablespoons of fresh basil, 1 minced garlic clove, balsamic vinegar, olive oil, salt, and freshly ground black pepper. Mix well to evenly incorporate all ingredients.
  2. Make the Cheese Mixture: In a separate bowl, add the crème fraîche, plain Greek yogurt, shredded parmesan cheese, 2 tablespoons chopped basil, and 2 minced garlic cloves. Using a hand mixer, beat the mixture until fluffy and well combined, which should take about 2 minutes.
  3. Assemble the Dip: Spread the whipped cheese mixture evenly in a serving bowl or a shallow plate with rims to contain the dip.
  4. Add the Bruschetta Topping: Spoon the tomato topping mixture over the cheese base, spreading it out to cover the surface but allowing some of the cheese mixture to show through.
  5. Serve and Enjoy: Serve the dip immediately with your choice of bread or crackers for dipping. This dip is best enjoyed fresh.

Notes

  • Crème fraîche can be substituted with sour cream or full-fat Greek yogurt if unavailable.

  • This dip is best served fresh but can be refrigerated for up to one day; bring to room temperature before serving for best flavor.
  • Adjust salt and pepper according to taste.
