Description

This Breakfast Burrito Bowl is a vibrant and hearty skillet-cooked dish combining tender sweet potatoes, colorful bell peppers, mushrooms, and spinach with a flavorful blend of spices. Enhanced with black beans for protein and optionally topped with salsa, Greek yogurt, and a fried egg, it makes a nutritious and satisfying breakfast option perfect for enjoying immediately or storing for later.

Ingredients

Vegetables and Beans

  • ½ pound sweet potatoes, diced
  • ½ large red pepper, diced
  • ½ large green pepper, diced
  • ½ large yellow onion, diced
  • 2 cups packed baby spinach, roughly chopped
  • 1 (8 oz) package mushrooms, diced
  • 2 cloves garlic, minced or pressed
  • 1 (15 oz) can black beans, drained and rinsed

Spices and Oil

  • ½ tablespoon coconut oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon salt (more to taste)
  • ½ teaspoon black pepper

Optional Toppings

  • Salsa (highly recommended)
  • Non-fat plain Greek yogurt (omit if vegan)
  • Fried egg (omit if vegan)

Instructions

  1. Heat Coconut Oil: Melt the ½ tablespoon coconut oil in a large sauté pan over medium to medium-high heat to prepare the cooking surface.
  2. Cook Sweet Potatoes: Add the diced sweet potatoes to the pan and sauté for about 10 minutes, allowing them to soften and start browning slightly.
  3. Add Peppers, Onion, and Spices: Incorporate the diced red and green peppers, yellow onion, chili powder, cumin, smoked paprika, garlic powder, salt, and black pepper. Cook everything together for an additional 10 to 15 minutes, stirring occasionally, until the sweet potatoes are tender. Extend cooking time if necessary.
  4. Add Spinach, Mushrooms, and Garlic: Stir in the roughly chopped spinach, diced mushrooms, and minced garlic and cook for 2 minutes until the vegetables begin to soften and aromatic.
  5. Incorporate Black Beans: Mix in the drained and rinsed black beans evenly into the vegetable mixture for protein and texture.
  6. Season to Taste: Taste the mixture and adjust seasoning with additional salt or spices as needed.
  7. Serve Immediately or Store: If enjoying now, top the bowl with a fried egg, salsa, and a dollop of non-fat plain Greek yogurt for creaminess. For later use, store the mixture in an airtight container in the fridge and reheat in the microwave before adding toppings.

Notes

  • For a vegan version, omit the Greek yogurt and fried egg; salsa is still an excellent optional topping.
  • You can substitute sweet potatoes with regular potatoes if desired, but cooking time may vary.
  • Use fresh or frozen black beans if canned are not available, adjusting liquid content if needed.
  • Customize spice levels by adjusting the quantity of chili powder and black pepper according to your preference.
  • This dish reheats well and makes a convenient make-ahead breakfast or meal prep option.
