Description

This Blackened Cod recipe features tender and flaky cod fillets coated in a robust blend of smoked paprika, garlic, and herbs, pan-seared in butter and olive oil to achieve a flavorful, slightly crispy exterior. Ready in just 15 minutes, it makes a quick and delicious seafood dinner perfect for any night of the week.

Ingredients

Blackened Seasoning

  • 3 teaspoons smoked paprika
  • 2 teaspoons onion powder
  • 2 teaspoons garlic powder
  • 2 teaspoons dried oregano
  • 2 teaspoons dried thyme
  • 2 teaspoons ground black pepper
  • 1 teaspoon Kosher salt

Main Ingredients

  • 4 cod fillets (fresh or frozen and thawed, about 4 ounces each)
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 lemon (cut into wedges)
  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. Prepare the seasoning: In a mason jar or bowl, thoroughly mix smoked paprika, onion powder, garlic powder, oregano, thyme, black pepper, and Kosher salt, breaking up any clumps. Set aside.
  2. Dry the cod: Pat the cod fillets dry on all sides using paper towels to remove excess moisture for better seasoning adherence and crust formation.
  3. Oil the fillets: Brush each cod fillet on all sides with olive oil to help the seasoning stick and to promote even browning during cooking.
  4. Apply the blackening seasoning: Evenly sprinkle the blackened seasoning mixture onto all sides of the fillets, gently pressing it in to ensure it sticks well.
  5. Heat the pan and melt butter: Warm a well-seasoned cast iron or non-stick skillet over medium-high heat, then melt the butter. If cooking in batches due to pan size, use 1 tablespoon butter per two fillets.
  6. Cook the cod: Place the fillets gently in the hot skillet and cook without moving for 2-3 minutes until a crust forms. Flip carefully with a spatula and cook an additional 2 minutes. Check for doneness; the fish should flake easily or reach an internal temperature of 145°F. Cook in 30-second increments if needed.
  7. Garnish and serve: Optionally sprinkle chopped fresh parsley over the cooked fillets. Serve immediately with wedges of lemon on the side for squeezing.

Notes

  • Ensure the cod fillets are fully thawed if using frozen before cooking.
  • Use a well-seasoned cast iron skillet for best crust development and even heat.
  • If your skillet is small, cook the fillets in batches to avoid overcrowding and uneven cooking.
  • Monitor the internal temperature for perfect doneness—145°F is the safe and optimal temperature for fish.
  • Serve immediately after cooking to enjoy the crisp texture and fresh flavors.
  • Fresh parsley adds a nice color and freshness but is optional.
