Ingredients
Pickling Brine
- 2 medium beets, peeled and sliced
- 3 cups water
- 1 cup apple cider vinegar
- 1 teaspoon kosher salt
Eggs
- 6 hard boiled eggs
Deviled Egg Filling
- 3 tablespoons mayonnaise
- 1 teaspoon Dijon mustard
- 1 teaspoon apple cider vinegar
- Salt and pepper, to taste
- Paprika, for garnish
- Sliced chives, for garnish
Instructions
- Simmer the Beets: In a pot over medium heat, combine the peeled and sliced beets, water, apple cider vinegar, and kosher salt. Cover and simmer for 20 to 25 minutes until the beets are tender, releasing their vibrant color into the brine.
- Chill Eggs in Beet Brine: Allow the beet mixture to cool completely. Transfer it to a large bowl and add the peeled hard boiled eggs, ensuring they are fully submerged. Chill in the refrigerator for at least 2 hours; for a deeper pink color, chill overnight, stirring once or twice.
- Prepare Eggs for Filling: Remove the eggs from the brine and pat dry with paper towels. Slice each egg in half lengthwise. Carefully scoop out the yolks into a small bowl, and arrange the egg whites on a serving plate.
- Mix Deviled Egg Filling: Mash the yolks with a fork until smooth. Add mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper. Stir thoroughly until the mixture is creamy and well combined.
- Fill Egg Whites: Spoon or pipe the yolk mixture back into the cavities of the egg whites. Garnish with a sprinkle of paprika and sliced chives for a colorful and flavorful finish.
