Ingredients
Protein and Vegetables
- 1 lb flank steak, very thinly sliced into bite-sized strips
- 1 lb fresh broccoli, cut into 6 cups of florets
Sauces and Oils
- 2 Tbsp olive oil (or vegetable oil), divided
- 6 Tbsp low sodium soy sauce (or gluten free Tamari)
- 3 Tbsp packed light brown sugar
- 2 Tbsp sesame oil
Flavorings and Thickeners
- 1 tsp fresh ginger, grated (loosely packed)
- 2 tsp garlic, grated (from 3 cloves)
- 1/2 cup hot water
- 1 1/2 Tbsp corn starch
- 1/4 tsp black pepper
Garnish (optional)
- 2 tsp sesame seeds
Instructions
- Prep: Start by cooking white rice according to package instructions so it will be ready when the stir fry is done. While waiting, cover the flank steak and freeze for 30 minutes; this makes it easier to slice thinly against the grain into bite-sized strips.
- Make the Sauce: In a bowl, combine the low sodium soy sauce, light brown sugar, corn starch, grated ginger, grated garlic, hot water, and black pepper. Stir well until the sugar and corn starch dissolve completely. Set aside.
- Cook Broccoli: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the broccoli florets and sauté for 4-5 minutes, partially covered with a lid, stirring or tossing occasionally until the broccoli is bright green and crisp-tender. For softer broccoli, add 2 tablespoons of water before covering to steam cook. Remove broccoli from the skillet and set aside.
- Cook Beef: Increase heat to high and add the remaining 1 tablespoon of olive oil to the skillet. Add the sliced beef in a single layer and sauté about 2 minutes per side, just until cooked through. Check doneness by quickly pulling out a piece.
- Add Sauce: Reduce heat to medium-low. Pour the prepared sauce into the skillet with the beef and simmer for 3-4 minutes until the sauce thickens.
- Combine: Return the cooked broccoli to the skillet, stirring to combine evenly with the beef and sauce. If the sauce is too thick, stir in 1-2 tablespoons of water to reach your desired consistency.
- Serve: Spoon the beef and broccoli mixture over cooked white rice and optionally garnish with sesame seeds before serving.
Notes
- Freezing the steak slightly makes slicing thin strips much easier and results in more tender meat.
- Adjust broccoli tenderness by adding water during cooking to steam or simply sauté.
- Low sodium soy sauce keeps salt levels moderate and makes this dish suitable for lower-sodium diets.
- Use gluten-free tamari to make this recipe gluten-free.
- For a vegetarian version, substitute steak with firm tofu or tempeh and use vegetable broth.
- Sesame seeds add a nice nutty garnish but are optional.
