Description

This Barbecue Pot Roast recipe features a tender, flavorful roast slow-cooked in a rich barbecue sauce, delivering a perfect balance of smoky and savory flavors. The roast is first seasoned and seared to lock in juices, then oven-baked slowly for a melt-in-your-mouth texture, making it an ideal hearty meal for family dinners or special occasions.

Ingredients

Roast and Seasoning

  • 2-3 pound roast
  • 4 tablespoons olive oil, divided
  • 4 teaspoons sea salt, divided
  • 4 teaspoons black pepper, divided

Sauce

  • 28 ounce bottle barbecue sauce

Instructions

  1. Preheat Oven: Preheat your oven to 325˚F to prepare for slow cooking the roast evenly.
  2. Season Roast: Drizzle one tablespoon of olive oil on the roast. Sprinkle two teaspoons of sea salt and two teaspoons of black pepper over the top. Using your fingertips, rub the seasoning into the meat thoroughly. Flip the roast and repeat the seasoning on the opposite side to ensure full flavor coverage.
  3. Sear the Roast: Heat two tablespoons of olive oil in a Dutch oven over medium-high heat. When the oil is hot, carefully place the seasoned roast in the pot using tongs. Sear the roast for about 2 minutes until a brown crust forms. Flip and sear the other side for another 2 minutes. If possible, hold the roast with tongs and sear the edges as well to lock in juices and add flavor.
  4. Add Barbecue Sauce: Pour the entire bottle of barbecue sauce over the seared roast. Lift the roast gently to allow some sauce underneath it, ensuring complete coating and flavor infusion.
  5. Slow Cook: Cover the Dutch oven with a lid and place it in the preheated oven. Cook for 2 to 2 1/2 hours, turning the roast once after the first hour to cook it evenly and absorb the sauce. The roast is done when it is tender and fully cooked through.

Notes

  • Use a Dutch oven or other heavy oven-safe pot to ensure even heat distribution.
  • Searing the roast is key to developing deep flavors and keeping the meat juicy.
  • You can adjust seasoning amounts according to taste preference.
  • For best results, a 2-3 pound cut like chuck roast works well for this recipe.
  • Leftovers can be refrigerated and served the next day or shredded for sandwiches.
