Ingredients

For the Chicken Marinade

  • 1 1/2 pounds chicken breast
  • 1/4 cup olive oil
  • 1/4 cup plain Greek yogurt
  • 1 tablespoon Dijon mustard
  • 2 tablespoons honey
  • 2 tablespoons lemon juice
  • 1 tablespoon minced garlic
  • 1 1/2 teaspoons dried oregano
  • 1 1/2 teaspoons dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes

Vegetables

  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 orange bell pepper
  • 1/2 red onion

To Serve

  • Tahini dressing (to serve)

Instructions

  1. Cut Chicken: Cut the chicken breast into 1-inch cubes to ensure even marination and cooking.
  2. Whisk Marinade: In a mixing bowl, whisk together olive oil, plain Greek yogurt, Dijon mustard, honey, lemon juice, minced garlic, dried oregano, dried basil, salt, black pepper, and red pepper flakes until well combined.
  3. Add to Bag: Place the cubed chicken into a large ziplock bag and pour the marinade over the chicken.
  4. Marinate: Seal the bag and mix to evenly coat the chicken with the marinade. Refrigerate for at least 1 hour, up to 12 hours, to allow the flavors to meld.
  5. Preheat Oven: Once marinated, preheat your oven to 425 degrees Fahrenheit (220°C) to prepare for baking the skewers.
  6. Cut Veggies: Core and cut the red, yellow, and orange bell peppers and the red onion into bite-sized cubes similar in size to the chicken.
  7. Assemble Skewers: Thread the chicken cubes, bell peppers, and onion pieces alternately onto 10-inch metal skewers, filling each skewer with a colorful combination. You should get about 6-8 skewers depending on packing.
  8. Prepare for Baking: Line a baking sheet with parchment paper and arrange the assembled skewers evenly spaced on the sheet.
  9. Bake: Bake the skewers in the preheated oven for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C), ensuring it is fully cooked.
  10. Serve: Serve the baked Greek chicken skewers hot with a drizzle of tahini dressing. They pair well with yellow rice, cucumber tomato salad, or quinoa tabbouleh salad.

Notes

  • Marinate the chicken overnight for maximum flavor infusion.
  • Use a meat thermometer to ensure chicken is cooked through to 165°F for food safety.
  • Metal skewers are recommended for even heat conduction; if using wooden skewers, soak them in water for 30 minutes beforehand to prevent burning.
  • Leftover skewers can be refrigerated for up to 3 days and reheated gently.
  • This recipe can easily be adapted to grill instead of bake for added smoky flavor.
